Any Veg*n Mamas Want To Start A Daily Lunch Thread?

I'd love to see what other veg Mamas are doing for lunches. Admittedly, I love to do left overs, but on the days we have to get creative I would love to have more ideas!

Any interest?

ETA: I changed the title to include all veg*n Mamas!

I would, I have an almost two year old and a 5 year old and lunches are the hardest for me. If I have to make another pb&j I'm gonna scream!

We tend to do alot of veggie nuggets, veggie dogs, tofurky slices, grilled cheese, pb&j, or mac n cheese. Of course any of these is served with fruit & veggies, but still... I need some better ideas that are still really easy to fix.

12/7. Left over chickpea cutlet and roasted broccoli with simple salad of baby spinach, walnuts and balsamic vinaigrette. Vanilla coconut milk kefir to drink.

Ds is two. Sometimes he asks for "beans" which means a can of sensibly seasoned glory foods brand Lima beans. I've found he likes them better straight from the can unwarmed. Sometimes he has just fruit and/or yogurt. He likes peanutbutter out of the jar. Yep. Love the morningstar Black bean burgers and the mushroom lovers burger (the portobello sounded good, but it was mostly frozen rice-yuck! The mushroom lovers is mushroom packed. And glory foods keeps my toddler guzzling greens (green beans and Lima beans) Can't live without abundant fresh fruit. And tomatos and avacados.

Here's what we have in regular, oh so boring rotation:

Grilled Cheese especially tasty with chutney instead of ketchup
Avocado, Cheddar, Tomato sandwiches with mayo and chipotle or mustard
Baked sweet potatoes with sage butter and goat cheese
quesidillas
I make soup every Wednesday so at least one day a week we have soup
Pizza - I keep dough balls frozen in the freezer. I just have to remember to take them out the night before
I'm going to make a point of adding some apple peanut butter or apple cheddar sandwiches and Elvises as well

We do green smoothies every day, usually mid morning.
Lunches:
-hummus with carrots and cucumbers. Dd always wants rice, so she getsthat with coconut oil.
-veggie coconut curry soup with brown rice.
- GF tortilla stuffed with hummus, cucumber, spinach and avocado. Carrot "chips".

We do snack lunches a lot too. Like fruit and veggies with lots of healthy dips (hummus, pb, etc). I always give her raw su flower seeds and raisins too.

Today for us was a peanut butter and agave nectar on WW bread that I baked, pinto beans and hummus with pretzel chips. Chocolate almond milk to drink.

Here are a few things that i try to throw in when I feel like we have way over done the pb and honey or jelly thang.
Broccoli cheddar bites
apple cut cored and filled with pb raisins and any seeds we have.
tortilla pizzas
honey lentils bbq style
crunchy garbanzo beans with cucumber and hummus.
avacado cheddar and honey mustard grilled sandwiches.


for breakfast I have a few recipes that i circulate:
veggie pancakes
waffle omelet(a bunch of things go in the waffle iron these day).
granola
oatmeal(I pre cut a bunch of fruit and have babyfood sized jars full of nuts seeds and dried fruit to throw in each moring)

fro snack I make about a tray of granola bars a week that are so full of fruit nuts and seeds that you can barely call them oatmeal bars. Also oatcakes if i feel brave.

I'm loving all of these ideas!

For us today it was baked tofu, steamed broccoli, pasta, with pinto beans (by request) on the side. Hee hee.

Our lunches aren't the greatest here.. I'm trying now that the cold weather is setting in to make warm lunches for the kids. We usually do a lot of sandwiches/leftovers

At lunch time it's me, ds(3) and dd(11 months)

Today-10/12-Leftover chickpea noodle soup/sliced apples/almond milk to drink

Today our lunch (ok late breakfast!) was leftover potatoes, onions, black & lima beans... I added a "cheese" sauce to change it up a bit. I made a huge batch of jalapeno nacho cheese sauce earlier in the week & I've been putting it on EVERYTHING. (Plus my crazy 10 month old loves jalapenos too!)

Today I made the caesar salad recipe from Rawsome. First time I've made it. Wow. So. Good.

For my toddler I chopped up some black olives, red peppers and green onions finely, stirred it into some homemade bean dip and spread it on crackers. She just gobbled them all up. I made the same thing for myself and ate them with some tasty red corn chips.
