Fruity potluck ideas?

Holiday potluck at LLL on Wednesday. I have an overabundance of apples and citrus fruit in the house, along with the basics. I'd really like to figure something out to use some of this citrus in particular, since I can dehydrate the apples. Any thoughts? I have a ton of tangerines/mandarins, several oranges, bunch of grapefruit, lemons and limes.

Oh, I also have a bunch of fuyu persimmons and pomegranates, if that makes things more interesting. My CSA is a little heavy handed on the winter fruits.

What about a compote? I googled "citrus compote" and came up with a bunch of ideas like this one:

How about Apple-berry salsa? Here is the base recipe but you can play with the amounts or substitute fruits to use what you have.

Salsa
2 medium apples
1 cup strawberries, sliced
1 kiwi peeled
1 small orange
2 TB brown sugar
2 TB apple jelly

Peel core and chop apple into small fine pieces.
Peel and chop kiwi into small pieces.
Zest orange peel then juice the orange. Combine apples, kiwi, berries, orange juice and zest, brown sugar and jelly. Chill. serve with cinnamon chips:

To make cinnamon chips: preheat oven to 475. Lightly brush large flour tortillas with water, sprinkle with cinnamon and sugar. Cut into wedges and bake 5-7 minutes or until golden brown.
