Organ meats and stock from venison bones?

I'm reading Nourishing Traditions for the first time and I am very intrigued by it. We do a lot of TF things in our normal diet, so most of what it's saying sounds pretty normal to me. One thing that caught my attention was the benefits of bone broths and organ meats. I cook with a lot of stock, but I've not made my own. My DH is hoping to bag a deer or two this season. Should I have him save the bones to make broth? Or does it have to be chicken, beef, lamb or fish? And the heart and liver, should I have him save those as well?

My hubby saved the bones, and we also get the deer/elk/moose cut up at a local butcher. I asked him to save bones and we ended up with two garbage bags full of deer legs, ribs, etc FULL of meat. I did make bone broth and it was ok....a bit too gamey for me, but the ids liked it.

We also saved the heart and liver because DH loves heart and liver.....but I cut into the heart and there was worms and it just totally icked me out so we threw it out.
