Favorite uses for whey?

I have about 12-16 oz of whey (I made from yogurt) and in the process of making some more. I don't know what to do with it. I have added it to smoothies, but I want to maybe do some soaking or fermenting but don't know what recipe to try. I have Nourishing Traditions, so you can direct me to one of those recipes.

I was thinking of soaking oats for oatmeal or rice or something.

I want a good idea where to start, not too out there since we just started and DH can be particular about food.

Thanks!!!

When I have a pint of it, I'll use it as the liquid in my no-knead bread instead of water.

Oatmeal is good, you don't even really need a recipe. For two people put about 1/2 cup oats in a small saucepan the night before. Add water, probably about the same amount. You want the oats to be pretty well swimming in there, they will soak up the water and expand a lot. Then a splash of whey, around 1 Tbsp. In the morning, add a little more water if it's all been soaked up, and then simmer for 5 min or so.

In the morning before simmering I like to sprinkle in some cinnamon and raisins and unsweetened coconut. Then to serve I put some butter, maybe more cinnamon, and a little bit of Rapadura or honey on top. Sooooo good! (Of course I'm grain free right now so I just do it for DH. lol)
