I think I am gearing up to start the GAPS diet after Christmas. I need to move forward in healing dd's gut (and mine) so I would like to hear progress reports from anyone who has been on the diet for a while. Do you have any new favorite meal plans?

I have been on GAPS since April and my food sensitivities are disappearing (I can eat eggs, tomatoes, avocadoes again!) and my tummy troubles have stoppped.I am so glad that I started this regime. I highly recommend reading the book these sites if you have not looked at them:

There really is tons of delicious choices, you just have to think about it more. I eat stuff like alomnd flour muffins, eggs, chicken salads, veggies with mayo ranch dip, spaghetti squash and meatballs, meatball and zuccini soup, chicken cauliflower dill soup roasted meats and vegtables, almond appleberry pie..... Pretty much if there is something you want to eat someone on the diet has figured it out! I don't really feel like I am missing out on anything as long as I don't get lazy about the cooking.
You also have to adapt your meals to what you can eat at the time so no ones meal plan will be the same (like I still cannot tolerate dairy and try not eat much honey/fruit because I do better low-carb but you may be able to enjoy those things).

I wanted to add that I had been doing traditional foods for about 3 years when I started GAPS and I recommend easing into the diet (unless you are having severe colitis symptoms, then I would start right away to stop that). Just slowly take grains out and learn to make the broth and saurkraut. Then eat only GAPS food then start the intro diet.
I took a few months to trasition in.

We are gluten, dairy, soy, corn, and egg free. We went through some pretty bad die-off when we first went gf last December. And again doing various supplements. We've seen lots of improvement in things like skin, cradle cap, peeling nails, etc, but dd has not gained any weight in over a year and 28 lbs at 3.5 yo, I am not so comfortable with. She is also pretty irritable and needs constant entertainment, still clingy, low energy (sooo not normal for a preschooler right!?!), only comforted by nursing (which I am starting to get very resentful of). Dunno, I just know things are "off" and we have plateaued.
I am trying egg yolk right now - it is one of our lesser sensitivities and last time I trialed (whole) eggs it took a month for symptoms to build up so I am hoping we can tolerate some yolks. That would be a BIG help. We are pretty low grain and have been for a while - only buckwheat and rice occasionally - but we eat a good deal of tubers. I already make broth and ferments. Our main symptoms seem to be caused by bad bacteria. Dd has very bad constipation and I start to get results from probiotics but I can never get her through the severe constipation of die-off. I finally found some magnesium I can get into her, so we're doing better on that front. This is one of my main concerns - our dysbiosis symptoms tend to point towards putrefactive bacteria that thrive on high protein, high fat diets and I am concerned that it will not address our issue. I tried to do SCD last spring but I had to stop because dd seemed to be in ketosis forever and it freaked me out.
