I wouldn't assemble it but only because my DS LOVES putting things together. For him that would be more fun than the bike itself.
But I agree that there is something magical about getting a brand new amazingly awesome new bike ready for riding.
A friend did this once....after they enjoyed Christmas morning, they received a fake phone call from Santa saying that he left a gift for him on the doorstep (the kid didn't speak to Santa, the Mom just pretended she was talking to him). During the fake phone call, Dad snuck around and put the bike by the door. Kid opens door, sees bike, freaks out, life is good.
