I've been sick, and haven't been to the grocery store in ages, but I'm finally feeling well enough to cook again. But I can't go to the store because I share a car with DH & he's using it.

So...yesterday, even though I felt lousy, I stuck a squash into the oven so I'd be able to make pumpkin bars today. Today I realise I'm out of sugar. And the recipe I was planning to use actually calls for splenda, and I sure as heck don't have that in my house (nor will I ever).

I have no idea what to make for supper. We have all the staples, but not much else.

I decided to sit down and look through my old Vegetarian Epicure books (the books my mom used when I was a kid) and it seems like everything has eggs or cheese. Bleh. We are vegetarian, but I almost always cook vegan because DH leans that way. I guess I should invest in some vegan cookbooks.

But I need inspiration now!!! Any ideas?

Well, seeing as how you have a roasted squash, I'm thinking a lentil (or bean) and sqaush soup of some sort.

Squash soup with bread and a salad sounds yummy!

The Voluptuous Vegan is a great cookbook. I still have my copy and I haven't been vegan for years.

Mmmm. Soup does sound good. Maybe tomorrow I'll see if I can't make a simple bread too. Thanks for the ideas. I ended up making veggie loaf, but it was pretty mediocre. I just don't know how to get the consistency right. Oh well.

I've put the Voluptuous Vegan on hold at the library.
