spam me - baked chix breast "sauce" ideas

I am slowly learning to cook meat in this house and have decided that I can handle baking chicken breasts So now I am trying to come up with ideas to add flavor to a very boring dish! Any ideas for easy sauces to spoon over it or sauces to cook it in? My two staples right now: poblano cream sauce to serve over it or apple/lemon juice mixture with herbs to cook it in. I know I could infuse more flavor if I sauteed or seared it, but the ick factor is too much Baking is my best bet for now! Thanks!!

I like to do a simple pan sauce with white wine, dijon mustard, some chicken broth and whatever fresh herb I can get my hands on (rosemary, parsley, oregano, it's all good).

Do pan sauces taste pretty good when you don't have fond to add to it? I wasn't sure if that was the key ingredient

Chicken parmesan! (so, spahgetti/marinara sauce:

Breading:
½ cup flour
½ cup Parmesan cheese (grated)
2 tsp basil
1 tsp oregano
1 tsp garlic
½ tsp salt
½ tsp pepper

dip chicken breasts in milk, then in breading mixture. Put in a pan with either olive oil or melted butter. bake @450 for 45-50 minutes turning once. Serve w/ marinara sauce & noodles

Put a couple teaspoons of olive oil in a small saucepan and a couple cloves of minced garlic. Cook for 1-2 min (don't brown the garlic, just soften it a bit). Then add a couple teaspoons of brown sugar and mix it all together. Pour over a couple of (raw) chicken breasts in a baking dish. Stick in the oven at 450F till cooked through (maybe 15-20 min or so?).

The garlic bakes and the brown sugar caramelizes - yum and so simple!

Mix some curry paste with some maple syrup and lightly coat all sides.

We also make ranch chicken. Dip chicken into ranch dressing then into bread crumbs. Bake at 400F for 30-45 min.

Baste w/ BBQ or Teriyaki towards the end of cooking then you can serve a bit more of the sauce for dipping if you like.

I do chicken parm by breading the chicken pretty much like mamadelbosque, then baking it. At the end of cooking I spoon some marinara on top and then some mozzarella cheese. Then I put it back in the oven just long enough for the cheese to melt. Yummy gooey melty cheese makes everything better.

Also My DH loves chicken sprinkled with garlic salt and lemon pepper. We usually use the grill pan for that, but baking would work too.

We eat roasted chicken with barbecue sauce a lot. I just make up the sauce--saute an onion in butter, then add ketchup, vinegar (about half ketchup, half vinegar), worchestershire, brown sugar, hot sauce, and whatever else sounds good to taste.

We make this recipe for Baked Chicken Dijon and the kids love it! Our changes are: 3T dijon and 2-3 T honey. It comes out with a lovely taste, not too mustardy at all (our kids don't like mustard).

I love Giada's chicken piccata recipe (in fact, just made it last night)... it tastes like it's much more effort than it actually is.

I also like the Seeds of Change brand Tikka Masala simmer sauce. If you have a Trader Joe's near you, they've got some yummy simmer sauces, too.

some of my go to ones for chicken are

1. apricot preserves poured over and baked as normal. It will have a sticky sweet glaze. I use 100% fruit preserves. It is also really good grilled.

2. I mix up about 1/2 cup honey, 1/4 cup mustard (depending on how big and how much chicken you have). Sprinkle with ground clove to taste and then baste the chicken with it. Again it will be a sticky chicken.

Marinate your chicken breasts (and other parts of the chicken if desired) in olive oil (about 1/4 cup more or less depending on the amount of chicken)
juice of 1 lime or lemon
1/4 cup water
1 cup tomato sauce
2 T country dijon mustard
italian seasoning making sure it includes basil
salt and pepper to taste
1 clove chopped garlic
1/2 t paprika
mix around in bag
I place the chicken and marinade in a plastic bag and put in the fridge for 2 or more hours. You can swish it around in the bag every so often.
Remove it from the bag into a baking pan with some marinade on top of the chicken and bake for 1 hour at 350.
