The last batch of pastured chickens we bought were much larger than we are used to, around 6 to 7 lbs. They are tasty and fatty still and we like them a lot, but not reasonable for roasting birds for our small family. So we have taken to defrosting and harvesting parts over a couple of days to make a few different meals. Yesterday, I made our favorite recipe with the leg quarters. Now I have a legless and thighless bird in the fridge and no good ideas. What would you do with it? Boil it and make soup? (We are GF/CF, for what it's worth.)
