Somebody here posted about some coconut oil/peanut butter balls they made but I can't find it!

There's a bunch of different recipes, and I do think there was a whole thread at some point. The one I've done is 1 c. honey, 1 c. peanut butter, 1 c. coconut oil. To me, it tasted like the inside of a Reeses peanut butter cup. My SIL thought they were too sweet. I think I put shredded coconut in there sometimes too. And sometimes people put cocoa in there.

Yum! I am just starting with coconut oil. Do I melt it first? Do I refridgerate the balls when I'm done?
Thanks!

This thread was my inspiration.

What I do is equal parts of PB, coconut oil, and raw honey, usually 1/2 cup each. Don't melt anything! Just put it all in a bowl and mix. If you want them chocolatey, add a few Tbsp. of cocoa powder. It won't take too much. Taste as you go until you like it. Then put the bowl in the fridge for a while until it's good and firm. Then roll into balls, roll into dried coconut or more cocoa pwd if you want, and then keep in the fridge. So easy, and SO yummy!

Thanks for the link to the other thread, and the suggestions! I made these for the first time today, and put the CO, peanut butter, and honey in the food processor. Worked great!

Ah, I don't have a food processor. I find it only takes a few quick turns with a spoon though to get it all mixed up, then leave it in the same bowl to refrigerate. I suppose if you had a pretty cold kitchen and your CO was pretty hard, though, that the food processor would help that.

I'm trying to remember how many balls that size batch makes. Maybe 20? Whatever it is, it's not enough when 2 people are eating them. They sure go quick!

Yeah, roughly 20 balls. I'm horrible at dividing things evenly, but mine came out to 22 balls. Soooo yummy! I rolled them in cocoa powder, then put them on a plate and stuck that in the freezer. Then I wrenched them off the plate, and put them in a baggy in the freezer.
