make ahead meal ideas

im in a rut.... im newly single, and get home from work between 645 and 700 most days... ds(2) and i are eating out more than we should because im so tired and hes so hungry when we leave. when we dont, it seems like we eat the same old things all the time

i need some good make ahead meal ideas.... hes allergic to dairy, and his daycare is nut free (i send his food because of his allergy) but if youve got something with nuts, i dont have to send that in his lunch, lol. if you have a dairy-ish recipe that might be easily adaptable too, id love to hear it.

my crockpot broke recently, but a new one is on my list eventually. i have an upright freezer, so i can freeze away, lol

Whatever I make I try to make doubles. If you have the freezer space you can turn any meal into a second one.

meatloaf: I double it and make 2 medium/smallish loaves and use the balance for meatballs. Eat one loaf, freeze the other. Have the meatballs for dinner the next night.

lasagna-make in loaf pans instead of one big one, perfect for freezing or make a big one and freeze the balance in to smallers serving for freezing.

Roast 2 chickens instead of one. this can turn into chicken salad, burritos, tacos, hot open face sandwiches, etc. Never mind all those bones for stock.

Roast porkloin easily turns into pulled pork the next day

And as much as I LOATHE rachel ray her 30 minute meal cookbooks have some keepers in them. I take them out of the library when I need some quick fix inspiration
