Too much meat--WWYD?

I bought a bunch of cuts off a rancher and some are huge and they all came frozen. Now I have a 10# brisket, totally thawed waiting to be tomorrow's dinner. My family of 3 and baby won't eat it all. Should I cut it in half now and refreeze it, or cook it all and then freeze the leftovers? I have several big cuts like this--how would you handle them?

cook it all, and eat it as leftovers for a couple days, or freeze leftovers. We can easily eat a whole leg of lamb in a couple days between 3 of us, and I know my dad & brother did just fine with whole leg of lamb's by themselves...

I would also cook & then freeze/eat leftovers. For how long has it been thawed? Perhaps you could prepare it a couple different ways over a day or two if it just thawed today?

I put it in the fridge last night so it's thawed today, will go in the slow cooker in the am. I'll cook it all like suggested and freeze the leftovers. I guess that's what I should do w/ the others? I don't know how I could cut it into manageable pieces frozen.

Frozen, use a large serrated knife like a saw to cut it. It actually cuts fairly nicely when frozen. Just take your holding hand, put a glove on, then stick it inside a gallon ziploc.

But I'd definitely cook the whole cut of the brisket. Then you can easily use it in leftover meals... add it to pasta, enchiladas, tacos, burritos, casseroles, etc.

Thanks, I'll try that on the others. I thought I was going to have to get out DH's circular saw!

Was this meat leftover? Usually the Rancher/Butcher will ask size packages you want. Like 1 pound packages of hamburger, 2 or 3 steaks a package.

No, I ordered it, it just is bigger than I expected.

for me you should defrost first the meat then take the amount that you need then refrost it. Because, when cook the whole meat and put the leftovers on the ref, there's a possibility that the food or the meat will spoiled and go to waste, because, it was already cooked.

o0o if i had that much brisket i definitely would've done part of it as a traditional corned beef brisket marinating in the fridge for awhile!
