Anyone have recipes they can share to help me assemble a holiday meal?

Normally my MIL does a huge traditional Christmas Eve dinner. Many courses, wine, desserts, they whole works. It is part of a big XMas Eve evening with our family.

SO....she is buried in work and life this year and I offered to take on XMas Eve. SHe graciously accepted. Also, my parents ended up free that evening and will be coming as well. So I am cooking a large meal for myself, hubby, 2 kids, both sets of parents and SIL.

I got a free honey baked ham from DHs work, so that is the main course. Normally MIL would do baked beans, corn, tatos, etc etc or whatever goes with ham. I am not tied to this but dont want to get toooo far off the beaten path.

Does anyone have recipes I could use that go with ham, taste yummy, but are not boring? I am Not an entertainer by nature, so I am trying to pull this off to her standards.

My favourite side with ham is scalloped potatoes...basically just layered potatoes (thinly sliced), finely diced onions, white sauce, repeat. Then, sprinkle grated cheddar over the top, and bake.

We're doing ham this year too. I'm making scalloped potatoes (I have a very unhealthy, not very exact recipe), bacon green beans and rolls.

I would say Scalloped Potatoes or homemade Mac N Cheese. Cornbread would be great too with butter and honey.

For greens, what about a spinach salad with toasted walnuts or pecans, dried cranberries and goat cheese. Salad dressing a fruity flavored vinagrette.
