Please Spam me with no/low fat vegan

recipes or suggestions for meals or cook books.
I'm having gallbladder drama and need to lose the weight anyway, so I am on a "minimal fat" food journey over the next three months and all I can do is sit here and think, what can I do with fruits, veggies and beans?
I think I can get away with a little bit of milk alternative, but I need to be careful.
Any ideas ladies?

Check out Dr McDougall's website. He promotes a low fat vegan diet for a wide variety of health problems and he does have recipes on his site.

I may be too much of a minimalist for your taste, but you may find 1 of these ideas appealing...?

I mainly eat raw vegan and a lot of the time eat mono-meals. Most days I snack on fruits (love them) and make a huge kale salad for lunch (my main meal). I usually use an avocado, but being that I am about 25lbs over weight, I recently dropped that. For the salad, I use kale, tomato, lemon juice, salt, hemp seeds and whatever else I have in the kitchen. Sometimes that is garlic, other times, sprouts, or shredded carrot, dehydrated cranberries, leeks, broccoli, etc. After eating that for mmmm....3 months, I finally changed from kale to green leaf lettuce (I was starting to get bored of kale). I am a single mom to a very demanding 10 month old DD, so I don't have the luxury of making intricate meals as she wants my attention all.the.time.

You may want to try replacing a meal with green smoothies, if you like them.

Good luck Mama. I had gall problems years ago and it's no fun!

Thanks Lorena, what you eat sounds really similar to the way I eat in the summer. the problem is in the winter I find myself craving heartier warm dishes. Also, smoothies, even the green variety, give me the shakes really bad. It's a carb/protein ratio thing I think. I wish I could do smoothies, but they just make me feel really yuck. Thanks for your ideas though.

Ok, for low fat warm stuff.....we have 2 favorites that we get already made from the health food store: 1. chuncky vegetable soup (carrots, celery, parsley, potatoes, onion, etc.) and 2. legume soups (they make vegan lentil soup, vegan split pea soup, etc.).

if you don't mind eating out of a can, Amy's kitchen/Amy's organics (can't remember the exact name) makes some really good bean chili (even my 10 month old devours it) and some good soups too.

Then of course, there's always hot tea. that can really hit the spot sometimes.

Soups and chilis can both be made with practically no fat. Many soups recipes call for olive oil, but it's totally unnecessary. Joel Fuhrman's books have a bunch of good soupy recipes. Oranges and clementines are great for the winter too (either for snacks or for a whole meal like I enjoy).

My mom had gallbladder problems that they said she should definitely have surgery, she started eating low fat vegetarian food and now she's fine (and she lost a whole lot of weight! and she loves it).
