How far ahead can I make pies??

So, I'm now committed to making... IDK, 7-9 pies for xmas And I'm wondering just how far ahead I can make them, realistically and not have them taste like crap/go bad by the 25/26th?? Will come out to something like this: 3-4 pumpkin, 1-3 blueberry, 1-3 strawberry, 1-3blackberry... entirely dependent on what I feel like...

I wouldn't make them any more than 2 days before, as ime the bottom crust can go a little soggy.

Mmmm pie, I wish I could find a good grain free pastry recipe, but I think the magical gluten is what makes pastry... well pastry!

You can make them up ahead of time & freeze them.

Or make up your crusts, freeze them & then the day before just add the filling & bake.
