It's my go to recipe when I make bread or muffins--I just add stuff here and there to change the flavor (seeds/nuts/berries/extracts/etc.)

Coconut Flour Banana Bread

4 eggs
2 bananas (mashed)
1/3 cup coconut oil (changed from original recipe--adds moistness--makes it yummy! You can also use butter or ghee here of course!)
1/2 tsp sea salt
1/4 tsp baking soda
3/4 cup coconut flour
cinnamon (maybe 1 tsp?? I just shook it in!)
cranberries (optional)
chopped walnuts (optional--I didn't add any but want to next time!)
pinch stevia to sweeten extra if you want (optional)

Blend the eggs, bananas, and then add dry ingredients.

Put batter into a greased bread pan or muffin tins, and bake on 350 for 40-45 minutes. (30+ minutes for muffins)

If you try the alteration on that fabulous orange cake recipe, please share what you think, and how it goes for you. (I recall you shared that recipe when we started this thread. W/out the honey it's not *as* good, but I think it's still really good...I'd love to hear other's thoughts on it!! I also want to make a pineapple version of it...Hmmm...maybe I'll try to do that sometime soon... )
