I made lactofermented soda pop!

And it tastes exactly like water kefir! LOL. I killed my water kefir grains some time ago so I'm happy to find that it's relatively easy to replicate the result (although you don't get the entertainment of watching the grains pop up and down...)

Anyway, I sort of followed the directions on the WAPF site - although I grew the ginger bug for an extra day or so and then accidently used only 1/4 the starter that I should have for the volume I had, and put in a bit too much sugar, but holy smokes did that thing take off! I put it in a carboy with an airlock and within a day it was blipping steadily. After a mere 3 days I bottled it and a day later it was fully carbonated. Now I have to offload some 10-15 litres before it explodes on me!

Oh, and it's really tasty! I did blackberry-apple flavour.
