I'm making homemade cinnamon rolls today for tomorrow's breakfast, and the batch makes 12. Since only 3 of us will be eating them, 6 will be more than enough.
Rather than halving the recipe, I was thinking of just making the whole thing and freezing 6 of the raw rolls (after I've let the dough rise, rolled it out, sprinkled on the cinnamon/sugar filling, rolled it up, and sliced them into rolls) -- would that work? Or should I bake them all and just freeze the leftover (unfrosted) rolls?
ETA: Also, can I make the cream cheese frosting tonight instead of having to make it just before I frost the rolls? If so, do I just set it out for a few minutes to let it come to room temp before frosting?
