Can I freeze cinnamon rolls?

I'm making homemade cinnamon rolls today for tomorrow's breakfast, and the batch makes 12. Since only 3 of us will be eating them, 6 will be more than enough.

Rather than halving the recipe, I was thinking of just making the whole thing and freezing 6 of the raw rolls (after I've let the dough rise, rolled it out, sprinkled on the cinnamon/sugar filling, rolled it up, and sliced them into rolls) -- would that work? Or should I bake them all and just freeze the leftover (unfrosted) rolls?

ETA: Also, can I make the cream cheese frosting tonight instead of having to make it just before I frost the rolls? If so, do I just set it out for a few minutes to let it come to room temp before frosting?

Freeze them after you fill them in the pan that you would use to bake them (line it with parchment if you only have one - then you can pop it out when it's frozen). When you're ready to bake them, pull them out the night before, and leave them on the counter overnight to thaw and rise.

If it's standard cream cheese frosting, no reason you couldn't make it tonight - just let it come to room temp before you try spreading it.

Yeah I wouldn't rise them and THEN freeze them.. just roll them unrisen and then freeze.
