Out of Soy/Rice/Almond Milk!

JUST made it with dinner. How we went through 4 boxes of soymilk is beyond me! Used veggie broth for the mashed taters....but now I can't bake the chocolate cupcakes I wanted after dinner! Vegan "Cream Cheese" icing is already in the fridge.)

Any last minute/late night baking ideas for something without soy/rice/almond milk?

I just use water in place of milk. Not quite the same, but seems to work.

You can also just blend a couple of tablespoons of most any kind of nut (almonds, hazelnuts, hemp seed, or even shredded coconut etc) per cup of water in a blender and strain it if you'd like.
