Recommendations from Moosewood Low Fat Cookbook?

I have this cookbook and haven't made anything from it yet (fell in love with Simple Suppers, which arrived at the same time!). My parents, who are both on Weight Watchers, are coming to visit in a few weeks, and I thought I'd make them something from the Low Fat cookbook. They are not vegetarians, but are open to vegetarian cuisine. Just saying that because they have a meat-eater's palate, I suppose!

So, what are your favorites from this cookbook? FTR, we are living within a very limited food budget, so expensive ingredients, like saffron, are out for us LOL.

The Harira is AWESOME. It may call for saffron, but you could totally make it without. It's got enough other flavors that you wouldn't notice anything missing.

Thank you so much for that recommendation! Honestly, I looked at the recipe and was hesitant to make it, but I did, and it was AWESOME! My mother and step-father are still raving about it and it's been nearly a week. I doubled the recipe and it still lasted less than 24 hours! And my 6yo DD even ate it!

I don't have the book in front of me so I am not sure of the exact recipe name, but there is a broiled eggplant with peanut sauce recipe that is amazing!
