As for the knives, ours are Chicago Cutlery from Kohls, as well. They're holding up nicely.
I have Farberware that I really like that is from the early 1990's and my mom has Farberware from the 1970's. That being said my mom bought my brother a set a month or two ago I think it has been super cheaped out. I think they are really good for smaller pans (i.e. 1 quart, 2 quart sauces pans)

I like a variety cast iron, I have one All Clad saute pan I like.

i have this set, for at least the last 12 years. you do want the steel, because a steel should match the knife, in terms of being the right hardness, etc.

i use the 8 inch for most choping (onions, potaotes, veggies, greens, melons...), the 6 inch for carving meats, the 4 inch for everything small (fruit, cheese).

i have other knives, they languish. except we do have a bread knife, which i agree you can go cheap on. i have a decent one from chicago cutlery, almost 20 years old and in good shape, tears right through crusty french bread.

We love our All-Clad pots and pans and our Wustof knives. They are a little expensive but I don't see needing to replace them. I agree with the pp about the knives-we generally only use the chef's, the 4-in. paring and the bread knife.

I got a great set of pots at Winners. their stock always varies but I still feel like we got a great deal a year later.

You can't go wrong with All-Clad. They are pretty expensive, but very sturdy, hold heat well, handles are solid, etc. I don't expect to have to replace them. Again, I would get the pieces that you think you'll use, versus a set. Big pots and roasting pans are important to me, because I cook a lot of soups, roasts, casseroles. I also love Le Creuset for the big Dutch ovens-they go from stove to table in a really pretty way as well.
