What is a good/easy vegan cookbook that is kid friendly?
I am giong to try and make the switch from vegetarian to vegan, but I need recipes that don't take a ton of ingredients..

Vive Le Vegan seems to be pretty kid friendly (the author has kids herself.) Vegan Lunchbox is another book written by a vegan mom with recipes that she tailored to her son's likes and dislikes- but she uses a fair amount of exotic ingredients in her recipes.

Salad People and Pretend Soup have a lot of veganizable recipes in them.

Vegan Lunch Box has some fun stuff.
And I am SO wanting to write a vegan cookbook for kids.

Fresh and fast vegan pleasures is one I've liked. Lots of simpler veggie-heavy recipes. Plus they're not too heavily spiced (making them a little more kid-friendly).

Yep, I second Vive Le Vegan and Vegan Lunchbox. I also think Eat, Drink and Be Vegan by Dreena Burton is good for kidlets, too. There is also Vegan Lunchbox Around the World, but I can't recommend it yet, because I just picked it up from the library yesterday and haven't had a chance to make anything. But it sounds yummy!
