Lard and Kidneys are high in Vit D?

I was talking to my WAPF chater leader yesterday and we were discussing what traditioanl peoples did since they all didn't have cod liver oil for vit D in the winter. And he said that kidneys (not only from pigs) and lard (only from outdoor raised pigs) has loads of vit D. Cool! Anyone hear of this? I am trying to find sources as to how much that really is.

I'd heard this too and we have a good source of pastured pork too, yay! But I think the pigs were butchered in the winter months and I wonder how much Vit D they had.

I wonder, since fat builds up in the summer months and D is stored in fat, wouldn't the D last through the winter? Isn't it sort of like the pig's personal D store?

Yes, this. Apparently all one-stomached animals store vitamin D in their fat, so if they are raised outside, they should have adequate stores. Nourished Kitchen had a post about vitamin D recently, let me see if I can find it... here: http://nourishedkitchen.com/sources-of-vitamin-d/

the liver pushes out 25-hydroxyvitamin D and the kidney converts it to 1,25-dihydroxyvitamin D.
