I got a list of my local Custom Meat Processors and decided to call then up and see if they have any meat scaps for sale. Several turned me away oevr the phone, but one said that I cuold have al I wantewd for free and they couldn't charge me and didn't want to know what I am going to do with it.
They said that they only deal with local hormone free animals.
Today they even threw out a dumpster full of bones, lard, fat, and liver. Next time they would save me what ever I wanted.

Would you use meat from a place like this? And how could I trust that the animal isn't feing fed hormones? This place is inspected randomly and it is not for feed lot meat, but for local raised.

If this isa good source, then it makes me shake my head that they are throwing away the best stuff and people are starving from malnutrition (especially from eating lean cuts of meat.)

I don't really know specifically whether or not the meat would be OK, but I do know that the place that processes our pastured meat cuts off all of the fat and I imagine they throw everything else away too unless someone wants it. It's just junk to them, even if we know it's full of the best stuff.

Is there a way to find out whose meat they are processing/dealing w/? My grass-fed/pastured beef/pork/chicken guy is local and uses no hormones/antibiotics, and goes through a local butcher as well. I would totally use his 'waste' (although my grassfed guy keeps all the lard, liver, bones, fat, etc. to sell) I might try to get a list of the folks whose meat he processes so you could contact them to find out more about this. I'd probably do that before utilizing things like the fat and liver where tons of toxins can be stored.

Good luck finding out!! Sounds like a great resource!

Toxins are not stored in the liver. That is a misconception that gets repeated here a lot. Here is an article that describes the liver's role in detoxifying the body. Metals and other contaminants may be found in the fat, depending on what the cattle were exposed to. (That said, I would honestly take these nutrient dense foods if they were offered to my family, especially if alternatives were not easily obtained or afforded.)

The article you linked says:

It deserves to be mentioned: Do not consume the livers of animals who’ve lived in confinement. Pasturefed and Organic are better choices (if you’re in Australia organic means animals have access to grass and natural feed). If you only have supermarket options, ask for calves liver, they have lived on pasture.
Maybe it's just wrong word choice, but I'm pretty sure this is what people are referring to when they don't want to consume liver from an unverified source.
