Can I freeze coconut?

I have a few bags of unsweetened shredded coconut. Can I put them in my deep freezer? Thanks...

Yep! I keep mine in the freezer - I double bag it to keep it from absorbing odors and from getting freezer burnt, but what I have is older than a year and still taste great.

Why? It keeps on the shelf for years.

I do. In fact, I think the label on my bag suggests storing it in the freezer.

I keep mine in a glass sealer jar in the freezer. I find that if it's more than 6 or so months old from the cupboard it tastes like cardboard.
