I need a vegan no soy ice cream for a friend

A dear friend of mine who I bake for often buys the coconut dream ice cream and it's really good but pricey. I have tried to make chocolate ice cream with coconut milk, and I used cornstarch to thicken a custard type thing, but it just diddn't come out right. I can't afford to buy any cookbooks right now and of all my vegan books not a single one has an ice cream recipe!

I'm just looking to figure out how to make it creamy and not rock hard. Chocolate would be my first pick for a recipe. Seems arrowroot is a popular way......anyone have basic tested recipe that is really good? I don't want to waste anymore cans of coconut milk and i don't really have the time to expiriment.

Do you have an ice cream maker? I just use the recipe from the instruction book that came with my machine and sub full fat coconut milk for the dairy milk and cream... and add a bit of oil (I usually use flax, but any mild tasting oil would be fine) to add to the creamyness and richness. You can skip the oil and use low-fat coconut milk to make it healthier, but it comes out much more like ice milk than ice cream that way. I'm at work right now, but can find the recipe when I get home and post it then

thanks, yes I have a good ice cream maker I'm not sure what I did wrong. Maybe it's because I used almond milk too and that's basically just flavored water

When I do half soy milk and half coconut milk, my "squeem" comes out much thinner like ice milk.... I usually need to use the oil and sub the entire amount of dairy used with full-fat coconut milk to get the right consistency.

My sister found an ice cream recipe on Instructables that she loves. She freezes bananas, lets them thaw slightly, and then puts them in a blender or food processor and mixes until ice cream consistancy. You could probably use that as your base and add chocolate to that. On Instructables.com, I think it is titled "one ingredient ice cream."

I use my own ice cream maker with coconut milk, raw agave and vanilla. If I want a variety I can put it all in a blender with fruit or cocoa.

Another GREAT one is either a pudding or ice cream, more freeze pops.
2 Avocados
1/2 cup or more to taste of agave
1/4 - 1/2 cup of cocoa, depending on how chocolaty you want it.
a pinch of salt and vanilla to taste.

Put it all in your blender or food processor until mixed well. Chill and use as a pudding or put into pop molds. My whole family loves these.

I will add almond extract or mint at times for variety too.

Thanks for the ideas, I ended up just making a base in my blender with cocoa powder, vanilla, honey and coconut milk with a banana. I'm chilling it in the fridge right now and I chopped up some pecans and frozen banana chunks, and the chocoalte syrup to swirl in is cooling. She is so allergic to soy that I cannot use vegan chips because of the lecithin
