Black eyed peas? Collard greens?

Does anyone have any really yummy, flavorful vegan recipes for these dishes? I am making them for new years for the first time ever this year.

i make mine simple and very garlicky. simply saute an onion, add a few cloves of chopped garlic, about 1/4 tsp chili powder (or dashes of cayenne, unless your kiddos object to both), add peas and diced tomatoes. you can include mushrooms if you like them.

in a separate skillet i saute garlic and stir the greens until wilted. i think they are best, most flavorful, when just barely cooked. then i serve with rice and possibly cornbread.

a nice variation: same recipe for peas, add broth to make soup, cornmeal dumplings, and just stir in the greens to wilt.

For greens I saute them in veg broth and garlic until wilted and sprinkle with lemon juice, salt, and pepper.

Hoppin' john is a great black-eyed peas dish. A friend makes it with smoked gouda instead of the bacon that often flavors it. It basically rice and black-eyed peas. There are a million variations. You certainly don't need meat or cheese if you're vegan. Saute some onions and garlic, maybe some mushrooms, or peppers and go to it.

i make mine like lizzyq but i add a splash of apple cider vinegar to the greens.

For the collards I like to tear or slice them up and saute them in olive oil with garlic and hot pepper until tender.

This is the best recipe I have tried for Collard greens -Citrus Collards w raisins. Its so good.
I first got the recipe in veg times magazine and they said drop the collards in water for 8-10 minutes first. In the video he skips this step. Both were his recipes. I did drop them in water both times I made them.

That's the exact recipe I was going to suggest. I borrowed his Vegan Soul Kitchen from library and tried that recipe - it was delicious and such a nice change from the usual flavours I've used. It works with kale as well!

Tuesday- I love finding great recipes like the Citrus Collards. I've made the collards 3 times in one week. Its great the next day as leftovers too- after all the ingredients really come together. The sweetness really comes out. Going to check for his book at the library. The last time I made it I cut the collards like he says in the video-very fine. They sauteed up nicely w/o the extra step of steaming.
