QUICK! Carrot Bread?

Does anyone have an amazing carrot bread recipe? Or tips on making one amazing?

There are so many variations online...I don't know which one

quick...pour into bread pans and bake kind of thing

There's always carrot cake, using grated carrot.

I've also steamed carrot chunks, pureed them, and used them as a substitute in a pumpkin bread recipe (same spicing). That came out great. I think I cut the sugar down a tad. If you do that route, I'd suggest tasting the batter before adding the last 1/3 cup of sugar or so and seeing how much it really needs.
