Fantastically wonderful almond flour recipes

As another compliment to our grain free thread. What are your favorite almond flour (or butter...or other nut flour LOL) baked goods?

I adore almond butter/or peanut butter brownies.
1 cup nut butter
1 egg
1/2 cup honey or maple syrup
1/2 tsp baking soda
and a handful of chocolate chips.

mix, pour into parchment lined 8x8 pan. Bake at 350 for about 20 minutes.

This is a fabulously easy recipe and my kids always love it. Full of fat and protein and perfect with some fruit for a snack or meal!

again, not much of a baker here, but we love the chocolate chip cookies from Elana's pantry. Oh, and fish sticks coated w/ almond flour.

Where does one get almond flour? We are not GF but I had some almond flour muffins last year that I still remember, they were so good.

I made some jam-filled almond cookies a few months ago that were quite good. Almond crackers are a fave - and the same dough can also be used to make crusts for things like mini quiche, cheesecake or mousse. Or there's always almond pound cake - that's a favorite around here. I'll change the flavor depending on my mood... DH loves it as a carrot cake.

I have a french frosted almond cake on my website. It's Gluten-free. Go to my homepage and it's there. I use advertising on my website, so I can't post it, but it's my homepage. Has pictures of the process and such. It's my favorite cake ever and people often request I make it when I'm coming over.

The ingredients are:
1/2 cup butter
2 cups of powdered almonds (grind almonds to fine powder with a food processor) or buy almond flour
1/2 cup sugar
3 eggs
1 egg white
1 cup of powdered sugar
1tsp almond extract

Preheat Oven to 325
Mix the butter and almonds with a fork. In a large bowl, mix the sugar, 1/2tsp almond extract and eggs until it is frothy. Then, add the almonds and butter to the eggs and sugar gently. Pour mixture into a small 8″ spring pan (bottom lined with parchment paper). Bake for 40 minutes at 325. Be sure to check for large air bubbles at around 20 to 30 minutes and pop them gently with a toothpick.

To make the “glacé” mix one egg-white, 1/2tsp almond extract and the cup of powdered sugar by adding sugar slowly until it is thick and opaque, but still pourable. You can also add orange zest or cocoa powder…improvisation is good here.

This cake is finicky so, check out the pictures and troubleshooting on my site before you make it. It took me about 10 tries to figure out how to not mess it up. I finally had to make my own recipe because the one I found (and translated) flopped so often.

I make almond flour by putting almonds through the food processor until they're fine enough to bake with. I've also used coffee grinders in a pinch.

I've loved everything I've tried from her book. Totally worth getting IMO.

I'm so easy. Thanks! I ordered it! Looking forward to trying it out. I'm hoping they are simple...I'm not a baker and don't do well with too many ingredients or multiple steps. Crossing my fingers that this is EASY.

I'm glad to see you ordered it--it is awesome. And I do LOTS of subs and still usually everything comes out YUMMY!

not at all, IMO. It's not like coconut where you get coconut flavor. It's a great sub because there is no real inherent flavor.

Which book is this? Also, I bought Bob's Red Mill Almond Flour but haven't opened it yet. Does anyone have thoughts on this brand? I could return it and get something different. Never baked with almond flour before but would like to start!
