What to do with a Boston butt pork roast?

I normally do pulled pork in the crockpot, but I feel like doing something different this time.

I usually rub it with salt, pepper, and paprika and then pour about a third of a cup of liquid smoke over it while it's in the roasting pan, before I put it in the oven. Then I add a cup of water and a really coarsely chopped onion to the pan and roast it at 350 until the temp hits whatever it's supposed to hit for pork. Usually, it's in the oven for three or four hours.

We make Cuban-style pulled pork and eat it with black beans and rice and smother it all in mojo sauce. Perhaps one of my favorite dishes ever!

I like to slow cook them in the oven. The first night, we eat it with barbecue sauce (whatever kind I feel like making ). The second night, we usually eat the leftovers over baked potatoes or on top of "barbecue fries" similar to chili cheese fries or on a salad as a "pig salad". All barbecue themed.

The third meal is usually some sort of Mexican. Just reheat the meat with some bacon grease, then serve it as you would carnitas. You know, on top of beans and rice, in tacos, tamales, tostadas, burritos, gorditas, etc.

Anything that is left becomes Brunswick stew. I use a family recipe, but it's similar to the linked recipe, except no butter beans, and I add 2 potatoes, diced.

These ideas all sound yummy! I'm saving them all for future inexpensive meals. I have been wanting to try Brunswick Stew but totally forgot about that idea! Thanks!

I just got a boston butt on sale and looked through my saved recipes that I've come across online. These are a few I'm thinking of

I like to pop them in the crockpot with thinly sliced onions, a couple sliced or diced apples, and some garam masala or curry powder. The first night we eat that with rice, the next night I'll make some soup out of the leftovers. My family loves it!

This is my favorite recipe
1 pork butt roast, 3-4lbs, at room temp
1/3C. worcestershire sauce
3/4C. brown sugar
1/2 C. apple juice
1/2 tsp. salt


Preheat oven to 400degrees. Place the rack slightly below the center of the oven. Sprinkle pork heavily with worcestershire sauce, turn it over and sprinkle other side heavily as well. Take handful of brown sugar and smush it all over meat to form a crust. Turn meat slightly and smush brown sugar all over other side. Pour apple juice in botom of pan, not over meat. Cover tightly. Place roast in oven. 5 minutes later, turn oven down to 200 degrees/ Roast without opening door for 4 hours or until meat literally falls apart when you try to lift it with a fork. Break meat apart and remove bone,push meat down into drippings. Sprinkle with salt. This salt should not be omitted, it is vital to bring out meat flavors. Serve meat in its delicious juice hot or at room temp. Makes great sandwiches too!
