Need Low Carb Breakfast Ideas

DH is finally on board with eating low carb and trying to lose some weight. I'm trying to find some ideas for breakfast for him. Ideally things he can just grab off the counter or out of the fridge on his way out the door. The more variety the better.

Need to be grain and bean free. Dairy is fine.

Ideas?

What about omelet muffins? You could put all sorts of meat and veggies in there to vary it and get lots of good stuff in him to help him get through the morning...My sis makes them now in foil muffin cups, then heats them individually in the toaster oven on her way out the door. I think she's also cooked bacon *in* the toaster oven on tinfoil...maybe you could set that up and he could just take both and run?

Maybe jerky? A bag of nuts/trail mix (on a really rushed day?) A smoothie w/ some eggs in it? Or a green smoothie that you made the night b/4 that he can just grab from the fridge and shake up, and maybe take along w/ an omelet muffin?

Great ideas! Has anyone tried making a smoothie the night before with eggs in it? I guess I always assumed it would get yucky so I only add them when it's going to be immediately consumed. Maybe I'm wrong though?

You can make pancakes out of bananas and eggs. They are very good cold with peanut butter and very portable. I add about 1-2 eggs per banana (depends on how mushy they are) and a bit of sea salt. Basically, I mush up a bunch of bananas and add eggs until the consistency seems right. They're kind of crepey. Fry just like regular pancakes on a greased griddle.

I love raw cottage cheese with pumpkin seeds and flaxseeds!

This is my EVERY single morning breakfast, and snack or other meal if i don't feel like making a big production because it's so quick and yummy and complete. Often times I make a double batch and fry in a HUGE skillet then cut in two and save half for later in the day. I need more calories than a lot of people because I am very athletic, so you can adjust amounts accordingly for a weightloss diet.

2 eggs about 150 calories depending on egg size
almonds, I use one serving of 28 grams which is i think a quarter cup 180 cal
half a banana about 50 cal
1/2 tblsp coconut oil - 60 cal
serving flax seeds 13 grams or 2 tblsp ground - 60 cal
i add lots of spinach
tsp cinnamon, I also use nutmeg and allspice or cloves
dash of stevia powder

This is about 500 calories, enough for me for breakfast

i blend everything in a vitamix except the nuts fora minute until smooth. Then add the nuts and blend another minute to leave little bits, I like nut chunks in mine

Fry in a pan like you would a pancake in a little coconut oil covered, untill it doesn't jiggle at all and it looks like it's drying out and crispy on botom, then flip and fry another minute.

It's a very complete meal and super easy.

What about yogurt and chopped nut parfaits? You could make those in advance as well and even put them in to-go containers. (You could sweeten the yogurt w/ stevia maybe to keep it lower carb?? I haven't tried it, but just a thought!)

ETA: you could even add some berries--they are pretty low carb compared to other fruit...

Totally. I don't know why they are so good LOL!! It's like those rip off protein bars but no sugar and nothing artificial and not like $3 a piece. Often, I make a huge batch and pour it in to a VERY greased cookie sheet, like a sheet pan size and bake them. Then I cut in to big squares. I just figure out how many servings I want. Like I would cut a sheet pan for me into 8 pieces, and use 16 eggs, and then just figure out how much of each thing I'd want in an idividual serving....I weigh out ingredients. And it's REALLY good if you use cocoa powder and almond extract. I have it calculated out by calories, protein and cost

geeez You are equally swell lol.....I am obsessed with making these it's ridiculous. I always use the same amounts of eggs, flax, nuts, but i use different ingredients. If you fry them in a pan it's more like a pancake that you can eat hot. At night sometimes i crave something sweet and I melt coconut oil and almond butter together and pour over it like syrup and pancakes.

I also make batches of frittata like something with a sweet potato crust. I boil with peels on, or bake sweet potatoes. Then after cool I shred in the food processor, and mix wtih some herbs and coconut oil then spred in to a baking dish and bake at 450 untill it starts to brown. Then I mix up a bunch of eggs with whatever else and pour in and bake, then cut in to wedges.

I wake up ready to chew off my arm so I NEED something already made up. i'm working on eating a little meat, but i mostly do eggs for protein besides the lentil, bean thing.

Speaking of lentils, does he like them? I really LOVE lentil soup in the morning. I make lentil burger like patties and eat those for breakfast a lot.

I make a big pan of quiche with eggs, ham and some veggie usually spinach or green pepper and onion. I cut it into pieces and freeze it. Then I'll heat up a square each morning. Cheese would improve the taste but I can't have that in the morning (it messes with a medication). I started this when I was preggers and had gestational diabetes and liked it enough to continue it into busy new baby life.

I'm not usually in the TF section but I saw the low carb breakfast under new posts and wanted to share what worked for me.

My eggnog keeps a couple of days in the fridge, so I don't see why a smoothie would not, unless the fruit becomes an issue with oxidation.

We do a similar muffin, called Egg in Bacon Baskets. In fact, had them for breakfast this morning. Line a muffin tin with a slice of bacon curled into a circle, pour the beaten egg and cheese inside. Bake at 450 for 10-15 minutes, depending on how well set you want them and if you'll be heating them up later again to eat.

I find that smoothies are very easy and fill me up nicely in the morning. I use an herbal infusion as a base if I'm on my game, but otherwise I use water. I load it with spinach, coconut oil, raw almond butter and two bananas. I blend and then add some frozen berries. It's so rich and wonderful and you can easily make it the night before.

I also love cream cheese squares. They are super easy...I need to go dig up the recipe. Basically it's just a package of cream cheese, a stick of butter, eggs, coconut flour and almond extract with some honey. They are like a dessert, but very easy to grab on the go and SUPER filling.

I also let me kids have "brownies" for breakfast which are just nut butter, eggs, honey and a pinch of baking soda. Easy to make, tasty and filling.

I also personally adore quiche so I'll second making a whole one or a breakfast casserole, slicing it and freezing it. Very easy.

Dh also likes to grab egg salad out of the fridge, throw it in a few romaine leaves and go.

oh, split pea soup with ham is a heavenly breakfast too! IF you have a thermos for him to take that could be an option!

Hmm, I have 2 things to suggest, but not sure they'd be quick enough to grab and go. One is that I make up a batch of homemade sausage patties and freeze them in-between sheets of parchment paper. I freeze mine raw and then cook them up straight out of the freezer and eat with 2 eggs and a little raw sauerkraut. If you need them heated up faster you could maybe cook them up and freeze them and then just re-heat in a toaster oven. Can post the recipe if y'all are interested.

Also, I do an "egg drink" which reminds me of eggnog. I usually make it up right when I'm going to drink it, but that only takes a couple minutes. It is: 3 raw pastured eggs, 1 T coconut oil, 1 T butter, 2 scoops white powdered stevia (my powder has a teeny tiny scoop that comes with it), dash of cinnamon, dash of nutmeg, about 1/2 cup boiling water. I throw everything in a wide mouth quart size mason jar and then blend it right in there with my handheld cuisenart blender...
