Fry in a pan like you would a pancake in a little coconut oil covered, untill it doesn't jiggle at all and it looks like it's drying out and crispy on botom, then flip and fry another minute.

It's a very complete meal and super easy.
Thanks for this! I make something similar from the SCD files called banana pancakes. You use one egg per 1 mashed banana. But, what kind of pan do you cook these in?

I cook in All Clad stainless, or cast iron. As long as you let the oil heat up enough sticking isn't a problem.

I really like to use walnuts lately. If you use that same type recipe except bake it on a sheet pan it's more like a protein bar. I love them! I use whey protein powder sometimes too.

When I used to LC, I'd buy a couple pounds of bulk sausage on the weekend, form it into 2 oz patties (I'd weigh them out), and fry them all up. Then drain them and pack them back into the fridge. I always just ate them cold - 2 per morning. Add a hard-cooked egg if you need to.

Or I'd do egg muffins - egg, veggie, meat, cheese baked in a muffin tin. Eat cold. By varying the veg, meat, cheese week to week, it'd prevent boredom. You can either scramble the eggs or crack a whole egg into each cup (don't use paper liners - just grease it really well or use silicone). Different textures, both are good. Again, variety. A variation is to line each cup with a large piece of meat, add some sauteed mushrooms into the cup and crack in an egg before baking. Then the meat forms the "wrapper".

Or I'd do egg custards - egg, cream, berries/nuts, sweetener baked in a 1c ramekin. 2 eggs, 1/2 c of cream and a handful of berries or nuts with a touch of sweetener baked at 300 for 60 minutes in a water bath. I have 10 ramekins, so I could bake enough for the two of us for a week on the weekend and just pop them in the fridge (they stack). Again vary the add-ins and the extracts to keep it from getting redundant week to week.

All of those are make on the weekend dishes that I could grab as I ran out the door.

Cristeen, great idea! I can buy bulk pork from a local farmer, and almost bought it this past week but wasn't sure if I could use it up. Didn't think of making the patties all at once, great idea!

I am so lame, I always do two eggs cooked in butter. I should try the omelet muffins to mix things up.
