1- homemade pizza, 1 pepperoni and 1 onion, red pepper, black olive. made a white bean soup but any way I puree, it still has tiny chunks

maybe freezing will help.
2- homemade biscuits and gravy with pot roast leftovers. made "
healthy no-bake cookies"
3- chicken & pasta casserole (I had enough for two last week), yummy salad. whole wheat banana bread with flax & ground oatmeal.
4- we had an odd schedule today and it was sort of FFY. There was a delicious linguine marinara for a late lunch. I have conceded that a pasta sauce from a jar is acceptable, especially when our only way of making "homemade" marinara is to use canned tomato products (we rarely eat any other canned foods, and tomatoes are more acidic thus posing a greater threat if stored in bpa-lined cans, so why would I leave those in our diet?)
5- well first of all, I made my first whole chicken! I did it in the crock, so it really felt like cheating... Rubbed it with salt, pep & paprika, and set it up in the slow cooker with lemon, garlic and rosemary... kind of like
here, but with paprika. Just tore it apart afterwards: breasts remained intact and everything else in shreds. Decided I could get more out of the bones, & the stock is still simmering. - I saved the white bean soup! I had to nuke it though.... I had already simmered it for a couple hours but I guess something about being refrigerated and then reheated (or perhaps the fact that I was using the magic bullet instead of the ancient food processor?) enabled creaminess. Yummy as lunch, and as a midnight snack :P - Made medium grain brown rice & added frozen peas toward the end. It turned out fabulous! With some chicken, this was dinner.
6-D was with her dad at dinnertime and no one else was home/up so I just pigged out on ice cream and used the sugar rush to clean. Yep. Finally got some company later in the evening- we'll call it a late snack: homemade pizza with roasted eggplant & goat cheese.. a little bit of leftover dough got made into a solitary cinnamon roll sort of thing, for which I even made icing. Yes, I am addicted to sugar. >sigh<
