I made a great soup last night, with odds and ends that were in my pantry and fridge.

Gypsy Soup--Moosewood Cookbook

1 chopped sweet potato
1 chopped onion
1 chopped red pepper
1 chopped carrot
4 minced garlic cloves
1 can chick peas
1 cup diced tomoto (I used canned tomato and drained the juice)
3 cups veg stock or water
2 tbspns curry powder
dash cayenne
dash cinnamon
dash soy sauce

It was delicious, and totally worked with the chick pea/sweet potato I had to cook with.

1- homemade pizza, 1 pepperoni and 1 onion, red pepper, black olive. made a white bean soup but any way I puree, it still has tiny chunks maybe freezing will help.
2- homemade biscuits and gravy with pot roast leftovers. made "healthy no-bake cookies"
3- chicken & pasta casserole (I had enough for two last week), yummy salad. whole wheat banana bread with flax & ground oatmeal.
4- we had an odd schedule today and it was sort of FFY. There was a delicious linguine marinara for a late lunch. I have conceded that a pasta sauce from a jar is acceptable, especially when our only way of making "homemade" marinara is to use canned tomato products (we rarely eat any other canned foods, and tomatoes are more acidic thus posing a greater threat if stored in bpa-lined cans, so why would I leave those in our diet?)
5- well first of all, I made my first whole chicken! I did it in the crock, so it really felt like cheating... Rubbed it with salt, pep & paprika, and set it up in the slow cooker with lemon, garlic and rosemary... kind of like here, but with paprika. Just tore it apart afterwards: breasts remained intact and everything else in shreds. Decided I could get more out of the bones, & the stock is still simmering. - I saved the white bean soup! I had to nuke it though.... I had already simmered it for a couple hours but I guess something about being refrigerated and then reheated (or perhaps the fact that I was using the magic bullet instead of the ancient food processor?) enabled creaminess. Yummy as lunch, and as a midnight snack :P - Made medium grain brown rice & added frozen peas toward the end. It turned out fabulous! With some chicken, this was dinner.

6-D was with her dad at dinnertime and no one else was home/up so I just pigged out on ice cream and used the sugar rush to clean. Yep. Finally got some company later in the evening- we'll call it a late snack: homemade pizza with roasted eggplant & goat cheese.. a little bit of leftover dough got made into a solitary cinnamon roll sort of thing, for which I even made icing. Yes, I am addicted to sugar. >sigh<

pot roast with parsnips
make-ahead mashed potatoes

for these things, I only have 3 or four ingredients I need so far... lookin good!

I tried this last month, but didn't manage to stick with it too well. All meals are vegetarian.

1. Bean, rice & veggie meat burritos & gorditas
2. Black bean & corn chopped salads
3. Pizza, ice cream & cake to celebrate DS1's birthday.
4. Vegan sausages & gnocchi with broccoli in garlic & oil
5. Grilled chik'n patties, sauteed mushrooms & onions, and roasted sweet & white potatoes.
6. Pineapple & tofu fried rice and tofu massaman curry (yes this was actually take-out, but since I am doing this from a $ saving perspective & I didn't pay for it, I am not counting it )

I only post dinners, and I'll noted if a meal is veggie only.

January

1 - Shrimp cocktail, leaf lettuce salad, N.Y. steaks, mashed potatoes & wilted spinach (Happy New Year!)
2 - Roasted Chicken, root veggies (squash, rutabaga, & green apple) with simple risotto
3 - Pot Roast with veggies (carrots, brussel sprouts, potato, green bean) & mashed potatoes
4 - Leftovers
5 - Speghetti w/ meatballs & spinach salad
6 - Leftover Jambalaya with extra shrimp from NY dinner.
7 - Meatloaf

1- Oops! Ordered chinese! i need help!
2- Chicken Parmesan w/ Mixed green salad and balsamic vinaigrette
3- Leftover chicken parm...
4- Chili and cornbread
5- Leftover Chili
6- Greek "pitzah" (pita flatbread with hummus, mozarella, tomato, olive, onion, feta, spinach, and parsley...yum!)
7- Beef stroganoff over whole wheat egg noodles and veggies

We're having our first meal of the week tonight with meat. One of my resolutions is to include many more meatless meals. DH is not excited.

We have budgeted to eat out once a week. Weekends KILL us and we usually end up eating out for 2 or 3 meals. I'm nervous for tomorrow to roll around!

1-2 chicken and wild rice soup for lunch--leftovers for supper
1-3 guacomole burgers for lunch and more leftovers for supper
1-4 miso soup, green salad, edename,rice
1-5 squash, corn, and grilled lamb steak
1-6 DH and I had more burritos and the kids had more burgers

1/1 Caribbean Jerk Chicken, rice, broccoli & rolls
1/2 spaghetti & garlic bread
1/3 migraine & was asleep during dinner..DH bought fast food for family
1/4 Chicken w/ Rosemary herb spice mix, sweet potato & mixed veg
1/5 Lunch planned eat out; Brinner (DH wasn't home) cereal & toast for me/ leftover french toast for DS
1/6 Mexican Lasagna Yummy--perhaps even better the next day!! But even cut in half, this makes a HUGE dish!

LizzyQ, can I have your recipe for garam masala parsnip soup? I have a bunch of garam masala laying around and parsnips are one of the few things in season here right now...

1. Chicken soup
2. Tuna and macaroni
3. Spinach soup and hardboiled eggs
4. Pasta bolognese
5. Lentil-kidney bean-carrot-curry soup
6. Change of plans, ate leftovers and bread. And chips Made pea soup before bed.

We cook vegan...I'll write when not vegan

1. Lunch-leftover enchalada casserole w homemade tomatillo sauce(WICKED!)
Dinner-All you can eat veg sushi-G/C from xmas(I don't count it as eating out)
2. Chickpea potato curry w tossed salad and roasted eggplant
3. Homemade pizza w coleslaw and carrot sticks
4. New meal-chop suey w toasted almonds on rice, roasted eggplant, carrot sticks. Ds gobbled it up! Dd tried lentils for the first time and gobbled them up! YAY!
5. I mad a yummy soup based on this curry recipe http://theppk.com/recipes/dbrecipes/...ipeID=143..but changed quite a bit
6. Veggie stir fry with almonds on noodles
7 Homemade pizza AGAIN..ds is on a kick

1/1: MIL brought over dinner
1/2: kids had mac n cheese with sitter, dh and I ate a late lunch out for "date night" and had popcorn later in the evening
1/3: SIL brings over steak and scalloped potatoes for dh's going-away party, I make bread and veggies
1/4: Kids ate mac n cheese and grapes. MIL brought me over a twice-baked potato, but I am not hungry because we ate Mickey-D's after the preschool pickup at 3 p.m. Weak. I am weak.
1/5: I ate the leftover steak and baked potato, kids ate chicken tenders and fries.
1/6: I had salad and whole wheat pastini, the kids rejected the pastini and ate tortillas, bananas, cookies and milk. Carb city.
1/7: Kids had Velveeta Shells n Cheese with the sitter. I had carrots and merlot when I got home later. The dog ate my dd1's favorite teddy bear.

Lunch and Breakfast (when dh has his way) are normally leftovers. When he's at work I just eat leftovers or cereal.

1. Homemade Mac & Cheese and Meatloaf
2. Spaghetti & Garlic Bread (cheated w/ store bought spaghetti sauce)
3. Leftover Mac & Cheese
4. Beef Stroganoff
5. Leftover Spaghetti (just me, didn't feel like cooking)
6. Hash (stew - simple and yummy)
7. Leftovers/cereal
8. Slow Cooker BBQ Ribs and homemade Potato Salad (we realized we're rather picnicy today, but it is 60+ degrees outside tonight)


Planned:
9. Spaghetti w/ meatballs (dh loooooves spaghetti btw, we eat it alot)
10. Grilled Chicken w/ Veggies
11. Ranch Chicken w/ Roasted Veggies
12. Leftovers
13. Homemade pepperoni & mushroom pizza
14. Roasted whole chicken w/ veggies

1. everyone was some place else except ds2 and I, so we just snacked, nothing of note
2. roasted butternut squash with sesame oil and soy sauce over brown rice (spent $14 at the farmer's market on apples, broccoli, kale, and mandarins)
3. bean and cheese pupusas, pinto beans, green salad with walnuts, spinach, romaine, carrots, and broccoli
4. cheese tortollini for the kids and spaghetti for me, both with tomato sauce and steamed broccoli
5. potato tacos with sauteed onions, pintos, avocado, and cheese on flour tortillas. we'll also have some sort of green vegetable in there somewhere (spent $11 at the produce market on onions, avocado, apples, limes, and muesli)
6. chicken nuggets and sausages for the kids and dh, roasted fingerlings, roasted broccoli and cauliflower, rolls, brown rice, roasted butternut squash
7. potato and tomato soup, crackers, pupusas
