1- homemade pizza, 1 pepperoni and 1 onion, red pepper, black olive. made a white bean soup but any way I puree, it still has tiny chunks maybe freezing will help.
2- homemade biscuits and gravy with pot roast leftovers. made "healthy no-bake cookies"
3- chicken & pasta casserole (I had enough for two last week), yummy salad. whole wheat banana bread with flax & ground oatmeal.
4- FFY. linguine marinara for a late lunch...
5- I made my first whole chicken! in the crock, rubbed it with salt, pep & paprika, and set it up in the slow cooker with lemon, garlic and rosemary... kind of like here, but with paprika. - I saved the white bean soup! - Made medium grain brown rice & added frozen peas toward the end.
6- late snack- homemade pizza with roasted eggplant & goat cheese.. a little bit of leftover dough got made into a solitary cinnamon roll sort of thing, for which I even made icing.
7- I made the brown rice with peas again and used some strategic positioning to hide it in the fridge, since it got scarfed down so quickly last time :P leftover chicken, some zucchini... chips and salsa after the baby went to bed...

weekend:

sun & mon are up to my mom &/or leftovers/use things up

I only post dinners, and I'll noted if a meal is veggie only.

January

1 - Shrimp cocktail, leaf lettuce salad, N.Y. steaks, mashed potatoes & wilted spinach (Happy New Year!)
2 - Roasted Chicken, root veggies (squash, rutabaga, & green apple) with simple risotto
3 - Pot Roast with veggies (carrots, brussel sprouts, potato, green bean) & mashed potatoes
4 - Leftovers
5 - Speghetti w/ meatballs & spinach salad
6 - Leftover Jambalaya with extra shrimp from NY dinner.
7 - Beef Stew with rice
8 - Chicken Tikka Masala & sliced manago

This week we fell off the wagon once, on Wednesday (I had grades due), but everyone packed their lunch every day, which was a big help.

1: Teriyaki Tofu and Orange Sesame Broccoli
2: out after church - it was under $8, though
3: Lasagna w/ Cashew Ricotta, green beans
4: leftover lasagna
5: out again
6: Potato pancakes and red chard
7: Creamy Cajun Chick*n Pasta, salad
8: Spicy Mung Bean Stew, sweet potato fries, tortillas
9: kind of a stir-fried rice, seitan, veggie thing
10: leftover ^^
11: Spaghetti, green beans
12: Teriyaki tofu and broccoli (again - this was good!)
13: Black bean soup, pico de gallo, tortillas
14: Baked potatoes w/ black beans, avocado, etc.
15: Spicy peanut and eggplant stew (new recipe experiment)

I'm in again. We do *schedule* eating out, but unless I'm sick, we do a pretty good job of not eating out "on the fly", which can be rather spendy as we absolutely do not eat fast food. Period. That's not an option. (BTW, has anyone seen the threads over in Nutrition and Good Eating about some really nasty stuff going on at fast foods... read that thread, it'll give you good motivation to never eat at another fast food restaurant in your life!)

So far this month. Suppers only. Lunch is leftovers or fresh sandwiches.

1: Hors d'oeuvres to snack on throughout the evening (Frozen from night before)
2: Spaghetti with salad
3: New Year's Eve leftovers morphed into sandwiches
4: I worked - FFY or breakfast for supper
5: Cottage Pie
6: Leftover Cottage pie
7: BBQ meatballs, salad and home fries
8: Eat out... scheduled - ended up getting take away from the local Mexican Restaurant because we had a contractor here giving a bid, so we didn't get to actually go out, but I didn't cook, either and we saved a significant amount of money by doing take away instead

I have the rest of the month planned out, but some days get switched around, so I won't waste the bandwidth to post it.

Is that too much soup? :-P Despite the supposedly separate food plans, I heard grumbles about that. I think I put together a great plan full of whole foods, low on cost and effort for how many servings it will yield. I don't mind eating soup a lot :P I see a couple of meat pies in our future too, with the roast beef and veggies from the stew or soup and the mashed potatoes &/or easy puff pastry topping... yum.
I have this problem where I want to make EVERYTHING ... all at once!

January 1 - Franks and beans. Exciting, I know.
January 2 - Cereal for lunch, pasta with sauce and garlic bread for dinner.
January 3 - DD asked for bean and cheese nachos.
January 4 - Fresh from the oven, homemade bread with butter, jelly, and peanut butter (not all together!) We ate so much, nobody was hungry for a 'real' dinner. Have black beans soaking for tomorrow.
January 5 - Turkey dogs wrapped in crescent rolls.
January 6 - The beans still haven't made it onto plates yet. I was planning on making sweet potato burritos with the black beans, but I napped with the kids, so we had a mishmash for dinner - yogurt, carrots, salad, random stuff.
January 7 - I don't even remember what we had last night, but I know we ate it here.
January 8 - Sweet potato burritos, finally! Hoping to use up the rest for taco soup sometime over the weekend.
January 9 - Scrambled eggs, bacon, english muffins = breakfast for dinner
January 10 - Red beans and rice with sausage

1/4 Chicken w/ Rosemary herb spice mix, sweet potato & mixed veg

1/6 Mexican Lasagna Yummy--perhaps even better the next day!! But even cut in half, this makes a HUGE dish!

1. everyone was some place else except ds2 and I, so we just snacked, nothing of note
2. roasted butternut squash with sesame oil and soy sauce over brown rice (spent $14 at the farmer's market on apples, broccoli, kale, and mandarins)
3. bean and cheese pupusas, pinto beans, green salad with walnuts, spinach, romaine, carrots, and broccoli
4. cheese tortollini for the kids and spaghetti for me, both with tomato sauce and steamed broccoli
5. potato tacos with sauteed onions, pintos, avocado, and cheese on flour tortillas. we'll also have some sort of green vegetable in there somewhere (spent $11 at the produce market on onions, avocado, apples, limes, and muesli)
6. chicken nuggets and sausages for the kids and dh, roasted fingerlings, roasted broccoli and cauliflower, rolls, brown rice, roasted butternut squash
7. potato and tomato soup, crackers, pupusas
8. veggie stir fry, ginger tofu, rice

We cook vegan...I'll write when not vegan

1. Lunch-leftover enchalada casserole w homemade tomatillo sauce(WICKED!)
Dinner-All you can eat veg sushi-G/C from xmas(I don't count it as eating out)
2. Chickpea potato curry w tossed salad and roasted eggplant
3. Homemade pizza w coleslaw and carrot sticks
4. New meal-chop suey w toasted almonds on rice, roasted eggplant, carrot sticks. Ds gobbled it up! Dd tried lentils for the first time and gobbled them up! YAY!
5. I mad a yummy soup based on this curry recipe http://theppk.com/recipes/dbrecipes/...ipeID=143..but changed quite a bit
6. Veggie stir fry with almonds on noodles
7 Homemade pizza AGAIN..ds is on a kick
8. Dh's night to cook-AND HE COOKED! Split pea/10 bean mix soup with tons of veggies. It was really a thick stew. Roasted potatoes, penne noodles(?why? no idea) and salad...he confused me with everything but the soup.

1/1: MIL brought over dinner
1/2: kids had mac n cheese with sitter, dh and I ate a late lunch out for "date night" and had popcorn later in the evening
1/3: SIL brings over steak and scalloped potatoes for dh's going-away party, I make bread and veggies
1/4: Kids ate mac n cheese and grapes. MIL brought me over a twice-baked potato, but I am not hungry because we ate Mickey-D's after the preschool pickup at 3 p.m. Weak. I am weak.
1/5: I ate the leftover steak and baked potato, kids ate chicken tenders and fries.
1/6: I had salad and whole wheat pastini, the kids rejected the pastini and ate tortillas, bananas, cookies and milk. Carb city.
1/7: Kids had Velveeta Shells n Cheese with the sitter. I had carrots and merlot when I got home later. The dog ate my dd1's favorite teddy bear.
1/8: tortilla w/ peanut butter for dd, bologna and cheese sandwich for ds, bologna sandwich for me.
