January 5 - Turkey dogs wrapped in crescent rolls.
January 6 - The beans still haven't made it onto plates yet. I was planning on making sweet potato burritos with the black beans, but I napped with the kids, so we had a mishmash for dinner - yogurt, carrots, salad, random stuff.

I almost blew it tonight! DS2 had a couple of friends over, and DS1 came home from college - I was invaded by hungry teenage boys. It wasn't the healthiest thing in the world, but I bought a bunch of frozen pizzas, salad, coke, and ice cream. I spent almost $20, but it was still a lot cheaper than ordering pizza.

1: Teriyaki Tofu and Orange Sesame Broccoli
2: out after church - it was under $8, though
3: Lasagna w/ Cashew Ricotta, green beans
4: leftover lasagna
5: out again
6: Potato pancakes and red chard
7: Creamy Cajun Chick*n Pasta, salad
8: Spicy Mung Bean Stew, sweet potato fries, tortillas
9: kind of a stir-fried rice, seitan, veggie thing
10: leftover ^^
11: Spaghetti, green beans
12: Spicy Mung Bean Stew
13: Black bean soup, pico de gallo, tortillas
14: Teriyaki Tofu and broccoli (again - this was good!)
15: impromptu sleepover - frozen pizza, salad, coke, ice cream - but we "cooked" and ate at home

planned:

16: White Bean Soup w/ Corn & Red Pepper, roasted brussels sprouts, carrot raisin muffins
17: Manzana Chili Verde, Jalapeno Cornbread
18: Tofurkey Sausages/buns, green beans and carrots, baked sweet potato fries
19: Mujadarrah and baby spinach
20: Baked potatoes, piled with leftovers
21: Lemon Herb Tofu, broccoli, carrots, quinoa
22: Spicy Peanut-Eggplant Soup, homemade bread

1- homemade pizza, 1 pepperoni and 1 onion, red pepper, black olive. made a white bean soup
2- homemade biscuits and gravy with pot roast leftovers. made "healthy no-bake cookies"
3- chicken & pasta casserole (I had enough for two last week), yummy salad. whole wheat banana bread with flax & ground oatmeal.
4- FFY. linguine marinara for a late lunch...
5- I made my first whole chicken! in the crock, rubbed it with salt, pep & paprika, and set it up in the slow cooker with lemon, garlic and rosemary... kind of like here, but with paprika. - I saved the white bean soup! - Made medium grain brown rice & added frozen peas toward the end.
6- late snack- homemade pizza with roasted eggplant & goat cheese.. a little bit of leftover dough got made into a solitary cinnamon roll sort of thing, for which I even made icing.
7- I made the brown rice with peas again and used some strategic positioning to hide it in the fridge, since it got scarfed down so quickly last time :P leftover chicken, some zucchini... chips and salsa after the baby went to bed...
8- had a yummy salad for lunch, enchiladas with leftover chicken for dinner!
9- Mojadra- lentils and rice (a little salt) topped with seasoned carmelized onions (a little salt, cumin, coriander, pinch of cayenne) and yogurt mixed with dill.
10- pasta with shrimp, leeks, broccoli, and a little red pepper & olive oil. making a cake tonight so it will be ready to frost in the morning... finally baked some super sour sourdough I had in the works for a couple days.... also made banana bread.... as well as cheesecake-swirled brownies ....!
11- lunch out with my dad for my brother's birthday... leftovers, cake, etc.
12- leftovers all day long!!
13- Three Sisters Stew from FtWF- yum!!
14- lentils w/ spinach, roasted carrots
15- leftovers, my mom made a "pizza casserole"
16- making something similar to this moroccan chicken, but I think I will bake it because I have ckn breasts that have been marinated w/ a matching flavor. Plus I have a whole chicken that needs to be made!

no clue how much or even if the other two adults in the house are eating what you make + overthinking things
= too much food
things aren't going to waste, at least- they're just not being used at their very freshest. These parsnips are going to have to make it til next week!

crock pot chicken
w/ lemon & garlic quinoa salad (FtWF)
leftovers with different veggies
need 1 more ingredient for the parsnip soup with garam marsala- the current plan is to get the chives for this on Sunday or Monday.
pot roast with parsnips

1/1: MIL brought over dinner
1/2: kids had mac n cheese with sitter, dh and I ate a late lunch out for "date night" and had popcorn later in the evening
1/3: SIL brings over steak and scalloped potatoes for dh's going-away party, I make bread and veggies
1/4: Kids ate mac n cheese and grapes. MIL brought me over a twice-baked potato, but I am not hungry because we ate Mickey-D's after the preschool pickup at 3 p.m. Weak. I am weak.

1/6: I had salad and whole wheat pastini, the kids rejected the pastini and ate tortillas, bananas, cookies and milk. Carb city.
1/7: Kids had Velveeta Shells n Cheese with the sitter. I had carrots and merlot when I got home later. The dog ate my dd1's favorite teddy bear.

1/11: no clue, but we ate dinner at home
1/12: baked chicken, veggies and fries, late night fridge raiding by dh
1/13: I had a dinner meeting at a Thai restaurant, dh and kids ate mac n cheese supplemented by various carb-intense fridge raiding
1/14: Hamburger Helper - I don't recommend it
1/15: salmon and baked potato, dh and I reached a new low by having an entire Fourth Meal around 11 p.m. - chips, dip, sushi, beer plus some McDonald's for him. It was a poor choice for both our waistlines and our budget - but it was fun
1/16: I bake bread and SIL brings over the rest of dinner
