1. everyone was some place else except ds2 and I, so we just snacked, nothing of note
2. roasted butternut squash with sesame oil and soy sauce over brown rice (spent $14 at the farmer's market on apples, broccoli, kale, and mandarins)
3. bean and cheese pupusas, pinto beans, green salad with walnuts, spinach, romaine, carrots, and broccoli
4. cheese tortollini for the kids and spaghetti for me, both with tomato sauce and steamed broccoli
5. potato tacos with sauteed onions, pintos, avocado, and cheese on flour tortillas. we'll also have some sort of green vegetable in there somewhere (spent $11 at the produce market on onions, avocado, apples, limes, and muesli)
6. chicken nuggets and sausages for the kids and dh, roasted fingerlings, roasted broccoli and cauliflower, rolls, brown rice, roasted butternut squash
7. potato and tomato soup, crackers, pupusas
8. veggie stir fry, ginger tofu, rice
9. I was so tired after dd's bday party we ordered pizza out
10. macaroni and cheese, carrots, sandwiches
11. refried pintos, fideo, tortillas, and vegan queso dip
12. yellow split pea soup with rice and spinach, green salad, dinner rolls
13. spaghetti primavera, dinner rolls
14. cheesy chickpea shepherd's pie from Vegan Dad
15. leftover night
16. worked late so ate there
17 went out to Mexican with dh and ds 2. Spent $36, but I have tons of leftovers.
18. quinoa pilaf with almonds, sesame seed, and pickled onions, broccoli, carrot, and beet salad, hot dogs, spagetti-o's, and cranberry sauce (we were supposed to have roasted chicken, but dh put it in the oven half frozen!)
19. finally figured out the chicken, kids and dh ate that with frozen veg and salad
20. chicken stew, salad, bread
21. take out Thai, but the visiting IL's paid for it, so it doesn't count
22. spaghetti with sauce, roasted vegetables, green salad, bread, pesto sausages
23. it was my nephew's bday and we were stuffed from the celebration, so nothing really

1- homemade pizza, 1 pepperoni and 1 onion, red pepper, black olive. made a white bean soup
2- homemade biscuits and gravy with pot roast leftovers. made "healthy no-bake cookies"
3- chicken & pasta casserole (I had enough for two last week), yummy salad. whole wheat banana bread with flax & ground oatmeal.
4- FFY. linguine marinara for a late lunch...
5- I made my first whole chicken! in the crock, rubbed it with salt, pep & paprika, and set it up in the slow cooker with lemon, garlic and rosemary... kind of like here, but with paprika. - I saved the white bean soup! - Made medium grain brown rice & added frozen peas toward the end.
6- late snack- homemade pizza with roasted eggplant & goat cheese.. a little bit of leftover dough got made into a solitary cinnamon roll sort of thing, for which I even made icing.
7- I made the brown rice with peas again and used some strategic positioning to hide it in the fridge, since it got scarfed down so quickly last time :P leftover chicken, some zucchini... chips and salsa after the baby went to bed...
8- had a yummy salad for lunch, enchiladas with leftover chicken for dinner!
9- Mojadra- lentils and rice (a little salt) topped with seasoned carmelized onions (a little salt, cumin, coriander, pinch of cayenne) and yogurt mixed with dill.
10- pasta with shrimp, leeks, broccoli, and a little red pepper & olive oil. making a cake tonight so it will be ready to frost in the morning... finally baked some super sour sourdough I had in the works for a couple days.... also made banana bread.... as well as cheesecake-swirled brownies ....!
11- lunch out with my dad for my brother's birthday... leftovers, cake, etc.
12- leftovers all day long!!
13- Three Sisters Stew from FtWF- yum!!
14- lentils w/ spinach, roasted carrots
15- leftovers, my mom made a "pizza casserole"
16- made moroccan chicken, baked
17- chicken with eggs for breakfast, pizza with chickpeas, potato soup got started
18- leftovers for lunch - crockpot chicken - lemon & garlic quinoa salad from FtWF - loaded potato soup
19- chicken & grits - sandwiches - homemade yogurt cheese & blueberries - more chicken
20- chicken tacos with pintos - lots of fruit!

I tried this last month, but didn't manage to stick with it too well. All meals are vegetarian.

1. Bean, rice & veggie meat burritos & gorditas
2. Black bean & corn chopped salads
3. Pizza, ice cream & cake to celebrate DS1's birthday.
4. Vegan sausages & gnocchi with broccoli in garlic & oil
5. Grilled chik'n patties, sauteed mushrooms & onions, and roasted sweet & white potatoes.
6. Pineapple & tofu fried rice and tofu massaman curry (yes this was actually take-out, but since I am doing this from a $ saving perspective & I didn't pay for it, I am not counting it )
7. Frozen lasagna, not exactly home cooked but it wasn't eating out either
8. Corn pancakes, bacon & fruit
9. Taking a lasagna to grandma's birthday potluck
10. Dinner at MIL's house
11. Spagetti & TJ's frozen meatless meatballs
12. Going to Ruby's for free kids meal night (planning this for weeks)
13. Potato soup & grilled cheese sandwiches
14. Fend for yourself night
15. Chik'n patties, roasted asparagus & pasta
16. Got a late start to running errands & the kids were starving so we ended up getting Chinese food, atleast we had a gc that paid for 1/2 the meal.

Whew! These posts get long at the end of the month! Glad to see there are still a lot of you here. We're doing pretty good this month. I hope to do next month as well.

1. dinner out with the inlaws. Their treat!

4. thai fish noodle dish (put in WAY too many rice noodles)
5. veggie soup with leftover roast/ sourdough toast with butter/salad
6. lentil and potato curry with sauteed swiss chard

8. taco salads with homemade fermented cortido
9. date night with a gift card! Plus leftovers for lunch/my mom (the babysitter) ended up spending more than the card on appetizer and one more glass of wine (which I did NOT need)
10. Vietnamese roast chicken in the crockpot, chilean squash (from moosewood cookbook) and leftover coleslaw.
11. Leftover chicken, green beans and potatoes, maybe a pilaf
12. leftover chicken, squash casserole, pilaf
13. cauliflower cheese pie (moosewood), chicken, squash and two donuts from the grocery store
14. ravioli from a bag plus sauteed chard and mushrooms
15. mongolian grill with the inlaws (their treat!)
16. snacks at my sister plus dinner at a pub with a gift card that I"ve had for over a year. Spent an extra $5 on the tip.
17. can't remember...need to update more often! We've been kind of fending for ourselves lately.

19. had salmon wraps, ds had noodles with sauce
20. made a roast in the crockpot but it wasn't ready for dinner so had pizza on a tortilla, beet salad and other random leftovers
21. roast, I did go out and have dinner with my mom, didn't mean to, but she wanted to so I got a salad and a glass of wine ($20)
22. finish leftovers, want to make that zucchini bisque soup
23. tostadas with ground beef, eggplant and other veggies. Used up some stuff from the freezer
24. Put bean, veggies, spices and some frozen ham and bones in the crockpot all day. We were gone and got home later than expected at 6pm and it was SO NICE to walk in the door to some good smelling food. All I did was puree the beans and chop the ham and dinner was served. It was VERY good.

I'm on my 10th day of being sick and it is killing me on this challenge.. I haven't been in the mood to cook in over 6 days... While I've eaten some things at home we've ordered out twice and today may be the 3rd... So ready to be healthy again so I can have my energy back!

So, I'm trying a new thing where I plan out meals for 2 weeks, to cut down on the spur of the minute shopping. We're trying to work our way to only shopping once a month and sticking within a very tight budget in 2010. Lunch (and breakfast when dh has his way) is generally leftovers and I eat lots of leftovers when dh's at work.

1. Homemade Mac & Cheese and Meatloaf
2. Spaghetti & Garlic Bread
3. Leftover Mac & Cheese
4. Beef Stroganoff
5. Leftover Spaghetti (just me, didn't feel like cooking)
6. Hash (stew - simple and yummy)
7. Leftovers/cereal
8. Slow Cooker BBQ Ribs and homemade Potato Salad
10. Leftover Spaghetti and BBQ
11. Ranch Chicken w/ Roasted Veggies
12. Leftover BBQ
13. Homemade pepperoni & mushroom pizza
14. Leftover BBQ
15. Bow Tie pasta w/ Chicken, Mushroom and Spinach in a Cream Sauce
16. No leftovers so, I got lazy and got some fast food. - that'll teach me.

We usually have oatmeal or eggs for breakfast, and my husband eats out for lunch () but Meadow and I eat quesadillas or something simple for lunch at home.

1. All you can eat veg sushi-G/C from xmas(I don't count it as eating out)

4. New meal-chop suey w toasted almonds on rice, roasted eggplant, carrot sticks.

8. Dh's night to cook-Split pea/10 bean mix soup with tons of veggies. It was really a thick stew. Roasted potatoes, penne noodles(?why? no idea) and salad...

We had a vegetarian fest- avocado/cuke sushi rolls, edamame, dumplings, egg rolls, 2 types of hummus/pita, peanut butter sandwiches, eggsalad sandwiches, cream cheese sandwiches, veggies, spinach dip, deviled eggs, cream cheese/red pepper jelly dip w crackers and vegan vanilla cupcakes

20. Penne w eggplant tomato sauce and adzuki bean balls with olives on top.
21. $7.00 popcorn and 3.75 soda for me at Disney Playhouse Live...ds ate a bit before, but we caved and ate popcorn.

tried this last month, but didn't manage to stick with it too well. All meals are vegetarian.

1. Bean, rice & veggie meat burritos & gorditas
2. Black bean & corn chopped salads
3. Pizza, ice cream & cake to celebrate DS1's birthday.
4. Vegan sausages & gnocchi with broccoli in garlic & oil
5. Grilled chik'n patties, sauteed mushrooms & onions, and roasted sweet & white potatoes.
6. Pineapple & tofu fried rice and tofu massaman curry (yes this was actually take-out, but since I am doing this from a $ saving perspective & I didn't pay for it, I am not counting it )
7. Frozen lasagna, not exactly home cooked but it wasn't eating out either
8. Corn pancakes, bacon & fruit
9. Taking a lasagna to grandma's birthday potluck
10. Dinner at MIL's house
11. Spagetti & TJ's frozen meatless meatballs
12. Going to Ruby's for free kids meal night (planning this for weeks)
