Ok. I'm Sunnylady's DH and I'm looking for some good dad recipes. Good dad recipes = yummy, plentiful, adaptable, and most of all easy. We've got plenty of eggs from our chickens. For some reason DW doesn't much like to cook with ground beef and the half cow we got came with loads of it. We keep a ready supply of different kinds of cheese and always have a variety of vegetables on hand, especially onions and garlic. DW does nearly all the cooking (and does it super well) but I want to be able to make real food for the girls and myself on the occasions when she is out. Any thoughts?

I just made three meatloafs for the freezer. They had ground beef and eggs.
Let's see my recipe had 1 egg, 1 lb ground beef, a little milk and bread crumbs, spices, diced onions.. mix by hand.. then form into the shape and I topped with some diced tomatoes and bacon.
I made the three, then wrapped and froze.
I think you could do a lot of meatballs too, and freeze those for spaghetti.. or Swedish meatballs (I serve this on rice or noodles whichever and can be heated in the crockpot).
Do you have bread crumbs?
Dice up some onions and make premade hamburger patties for the grill..
My mother makes lasagna with egg and ground beef in it, but I know not everyone does.. I made a dozen lasagnas earlier this year for the freezer. I used the tinfoil brownie pans and sealed them in the gallon size bags. (I have the sealing machine thing). A dozen lasagnas only took us about 2 hours to build. Everything was cooked on the stove top, they were baked each individually as we used them.. good way to use up your bits of "this and that" some were made with spinach leaves, some with ricotta, etc.
My dp LOVES the lasagnas we made because he just pops them open, in the oven for 45 minutes on 350. They are already in their pans and everything. My 6yo LOVES lasagna.
You could probably make some 7 layer bean dip stuff ahead of time in the brownie tins also.. a layer of refried beans, a layer of ground beef with taco seasoning, etc.. In fact, now that I am thinking about it, I would probably brown a couple of lbs of ground beef with some taco seasoning and just freeze it cooked.. for make your own taco night.. serve with chopped lettuce, salsa, and refried beans.
Make ahead beef and bean burritos! Cook the ground beef, season, roll with refried beans in tortillas.. I would put probably 6 in the gallon size freezer bag.. then when you want to eat them just pop them in the oven and smother with cheese!
Last night I made stuffed peppers.. they aren't my kids' favorite meal, but I think it is because they are used to me dicing and hiding the peppers in other recipes rather than making them the main feature..
The recipe I tried out called for cooked rice, ground beef, spices... I added a bit of cheese and topped with cheese.. stuff mixture in the peppers and top with tomato sauce and italian seasoning.. baked for almost an hour.
OP: I think its pretty sweet you are trying to figure out what to do with the ground beef for your dw.. I would plan a "bulk cooking night" with your kiddos and just whip some of these things out in one night and freeze them all.. then your dw doesn't have to deal with the ground beef.. a lot of ground beef recipes you have to "mix by hand" and it can be kind of gross (well, a little bit).. but bulk cooking can get it done in no time and then you know there are dinners in the freezer waiting for you if you need them. I think it is just important to wrap things well (I use the seal machine thing), and label well.
