Cutting the Carbs in the NEW YEAR!!! - Page 3

COCONUT FLOUR Blueberry muffins:

3 eggs
3 tbsp butter or coconut oil, melted
3 tbsp honey
1/4 tsp salt
1/2 tsp vanilla
1/4 tsp almond extract
1/4 cup sifted coconut flour
1/4 tsp baking powder
1/2 cup frozen blueberries.

Blend together eggs, butter, honey, salt and vanilla. Combine coconut flour with baking powder and whisk. Add to wet ing and mix until no lumps. Fold in berries and scoop into muffin papers. Makes 6 muffins.

Bake at 400 for 15-18 min.


I just started taking care of some children, and today they were very unimpressed with snack. (Where's the bread? etc ) So I'm baking a batch of these and a batch with craisins and a batch with raspberries. They are SO SO SO SO GOOD! The kids should love them.

I'm going to get some coconut flour, I have only used it for breading chicken...

I MADE sweet potato flour and i'm so impressed with myself. Not low carb but grain free which is all I care about

Still kicking it around here! Did workout yesterday, I could tell my energy level was not 100% but I did ok. I did not sleep again last night though, we are still totally whacked out from the flu-the baby took a huge nap yesterday morning then nursed all night... sigh... I had been sleeping like a baby!

food yesterday--- about 60c total
the 2 eggs and homemade sausage
dark chocolate (maybe 1/4 of the bar)(chocolate is finally gone! I let the kids eat most of it and told dh to stop buying it! I feel compelled to eat some even if I don't want to! )and almonds- 1 serving
lunch- taco salad- beef-black olives-romaine-salsa
snack- blueberries(1 serving) w/ coco cream(1 serving)
supper- pepper steak- onions, tomatoes and bell peppers w/ steak

my appetite was totally whacked out yesterday. I felt the need for more carbs yesterday afternoon- so I ate the blueberries, but overall my feelings of hunger have been nonexistent. my portion sizes have shrunk dramatically and it is really messing with me.

Oh, and greenmom- I think we all want to be those skinny w/out trying people! I know I was gripping last month and JTAMom was lamenting as well. But the important thing is to move forward and have goals you can keep an eye on- I think the strength and endurance goals helps with that. Oh, and feeling good of course really is nice as well

This looks yummy. Egg/alternative 'flour' proportions look similar to this flax bread recipe I've been reading about.


I am enjoying bfast this morning. Hungarian salama with laughing cow cheese. Black tea with coconut oil. Aiming for super low carb today.

Violet- I have to ask as well w/ thyroid and blood sugar issues have you tried 100% gluten free trial period? Celiac's and glutn intolerance are intertwined w/ those and any other autoimmune diseases. I noticed definite improvement in blood sugar when going 100% gf(as opposed to 80-95% I was for a while)- I mean every trace I took out- do not even bake w/ gluten in my house- It didn't totally "fix" the bs issue/hypoglycemia, but it certainly improved and that combined w/ 100% grain free and low carb and I don't notice issues hardly ever any more. Anyway, just a thought I am paranoid about gluten and while low carb gets out most of it, many have traces of gluten still yet- in sauces, etc and then they cheat w/ that as well, just a thought anyway! I think everyone would benefit from at least a month trial of strict gf trial, but that is my soap box

Oh, and on today for myself, today would be a If day, but still feeling off a bit, so playing it by ear as I meant to eat more and more carbs yesterday as I went so long w/out eating and had the flu, but my body decided differnt I guess.

I'm not sure I follow you exactly. I don't have thyroid issues per se, if I do they are undiagnosed. My hormonal stuff is unusual and weird and a long story. But it involves adrenal failure which wasn't supposed to be possible as a result of medication which then led to infertility and other high weirdness.

I don't think I have Celiac's. I have been GF in the past. I can eat carbs just fine, it's just that they make me fat If I want to lose weight, I must eliminate carbs. Typically small amounts of carbs in sauces frex, are fine and don't stall me, but I think they may have changed as my body is pretty famine savvy and laughs at low carb now.

Sorry I am not always coherent This am I am operating on way toooo little sleep so that doesn't help. Anyway, I just think gf is good for most anyone to try, especially w/ suboptimal health. Those things you mention can be related to Celiacs or at least non Celiac's gluten intolerance. My friend has had a very similiar road and just finally eliminated gluten this past month after testing showed up Celiac's. The first suspiscion for me was a 16 week miscarriage and then just all out funky cycles. Lots of celiac women have difficulty w/ fertility. Celiac's can cause weight gain in some and weight lose in others. And even those w/ intolerance can experience the effects. As I said I took gluten out for a bit 5 yrs ago, but never removed trace amounts and and cross contamination. Anyway, finally 1.5 yrs ago I cleared everything out and it was positive in so many ways- so I am a HUGE GF cheerleader- so you just have to bare w/ me! I think it is poison even in small amounts!

great job everyone! so proud of all of you! in all of my falling out of the wagon stories i am creating, it is so nice to come back here and get remotivated. most of my meals are lc and then i completely crash on a few, BUT i will just keep picking myself off, dusting myself off and climbing back in.

nights have been rough with my littlest getting over a cough that is disrupting her sleep and working on molars and our new boxer rescue having tummy issues resulting in accidnents on my carpet that have resulted in 1 a.m. carpet steaming sessions. i seem to get weak when i am not rested, although i seem to need more sleep when i am carb binging. at least i am starting to see and feel the pattern. for me i think part of this is important for me in helping me to stay lc/primal in the long run. i have to learn and experience the insulin spikes to stay clean.

anyway, funny story for you all... i was steam cleaning the carpet spots yesterday for the millionth time as my two girls played nearby when i heard my new boxer barking his head off out back (ugh, i have a neighbor with 3 under the age of 4 and i know this could ruin her day.) so i scoop up the girls and run downstairs to see that d (the new boxer) has destroyed a poopy diaper all over the yard and is now working on a pillow to our patio set. he is wildly tossing it around and barking at himself. ugh. i try to capture him, which results in a game of keep away and more barking. i finally get him and put him inside while i replace the pillow and gather the remains of what he has left from his diaper snack. just as i finish he comes running through the house, smacks into the screen door and takes the whole thing down. this scares my littlest and results in tears. i scoop up the dog, stick him in his crate for some quiet time (mine) lean the screen door against the house (bent too much to be replaced in its' current state) and decide it is nap time. then i wake up and go eat m & m's and pad thai. must stop rewarding my crazy days with carbs. ugh.

then i was at the amazing baker's house and had eggs and coffee (check) and an amazing cheese/lemon zest danish. off to run and IF until tomorrow. the great news is that i loaned my mum the book and she is on board. now i have new motivation to be carb clean, i know i will have to to keep my mum on board and help her to get healthy. hooray! she is so excited and now so am i!!!

yum on the coconut muffins! i am going to make these with my little girl tonight!

You know, re: eating after sleeping, I always want to stuff my face when I wake up from a nap. I don't know what that is. I try to make it a rule to stay out of the kitchen after a nap.

I'm on a protein bar recipe hunt right now. I need something I can cook up in quantity and have on hand for those days there's no time for me to eat bfast or lunch. Or when I wake up from a nap and want to strap on a feed bucket.

And I personally love my brownie recipe:

2 cups almond butter, smooth roasted
3 eggs
ÂĽ cup honey or maple syrup
1/2 cup espresso or strongly brewed coffee
1 tablespoon vanilla extract
½ cup cocoa powder
½ teaspoon salt (a bit more if your almond butter is unsalted)
1 teaspoon baking soda
1 cup chopped roasted hazelnuts (or other nuts)
(dried cherries, etc are really yummy too!)

Mix almond butter until smooth, then add eggs, sweetener, coffee and vanilla. Then add in dry ingredients and add nuts/dried fruit etc.

You could add protein powder to this if you wanted to up the protein, I would just increase the liquid a bit, or maybe add a bit more almond butter.

OOO that sounds delish. I make similar things with flax, almonds or other nuts, cocoa powder, dates pureed and eggs. I make enough to bake on a huge sheet pan and i eat them a couple times a day. They are even more like a store bought rip off protein bar if you drizzle melted bittersweet chocolate

mmmm, I love hazelnuts! The last few times I have been to the hfs they have been out, they are soooo yummy!

Still kicking here, finally got some sleep last night as baby didn't overnap yesterday, ya! I was sure dragging from 2 nights w/ little sleep! My workout, was a bit weak.

Appetite still not very much at all. Tried getting in some more carbs yesterday evening, thus the non- Paleo food choices- plus I am way low on groceries as we never made a trip due to fil being in the hospital and then us having the stomach flu.
b-2 eggs(fried in tallow) small piece homemade sausage
l-piece of leftover steak(mostly just steak as I ate the veggies laast night)
s-2 baby carrots and maybe 1 T of pb
supper- chicken chili (lots of various veggies in this, but I didn't eat a whole bunch)and handful of cashews

weight 132.6 this am, I am soooo very anxious to get under 130, sigh, patience!

I'll add the bars to my recipe list. I'm just collecting ideas now and need to shop for ingredients and start experimenting.

Yesterday went well. There were some potatoes, but in small amounts. I exercised even though I didn't feel like it and DH and I successfully battled some serious junk food cravings.

Yesterday's Menu

-Bfast Salama with laughing cow cheese
-A lunch buffet with some beef, sauerkraut, vienerschnitzl, 2 bites mashed potatoes
-Snack Almonds with dark chocolate
-Dinner Kielbasa and kraut (leftovers)
-Snack Salama and laughing cow cheese

Eh now that I look at it, not too impressed with myself. But it's still better than the cookie holiday binge and I was truly hungry yesterday.

My claim to fame yesterday was doing a bunch of push ups.

The menu today is tentatively:

-Bfast salama with more cheese
-Lunch??? Crap I have no idea! I hope I have some kielbasa still leftover.
-Dinner: steak and salad

Going to try to keep the snacks to just almonds or some cheddar cheese and ditch the chocolate.

awesome on the pushups! give yourself kudos for that!!! and avoiding junk food, sounds like a pretty good day to me!

we made it outside here, nothing too big though, just walking around, it is not good snow weather, not even an inch high and won't pack at all, but at least we got out some. had some eggs and bacon, then some hot cocoa (made w/ coco milk) when we came in as a treat, I only had about 4 oz maybe. I am rambling so much. Nursing and typing !

We have 6-8" of snow if you want some. We're getting 6 more inches tonight too. Ugh.

I don't mind winter at all, but the snow on the roads all. week. long. is getting really annoying. Plus it has been too cold for DD to go out safely We're in the teens and getting colder. Which is sad since DD picked out a toy shovel all by herself the other day and is dying to use it just like Daddy.

Salama and cheese for lunch. No kielbasa left and nothing really sounded interesting so I just went for easy.

Is coconut milk that low carb? I can 't remember. I've been adding some coconut oil to my teas partly for low carb and partly to try and heal my chapped lips.

Wow, lots of snow there! coco milk is not terribly low carb, but has good fat as well, I always mix it w/ about 1/2 water for hot cocoa- it is about 4 g(total) per 2 oz.

I'd like to join you all. I have been grain free since August, I didn't slip over the holidays, even though we spent 2 weeks at my in-laws. I am really proud of myself. I ate a ton of chocolate though!

I'm going to start today with no more sugar, I also need to start limiting the rice/potatoe amounts I eat.

An entire can of coconut milk has about 30g of carbs. The oil has 0.
