Three very sick kids here today but I managed to prep some dinner while they were napping. I have teriyaki tofu marinading and made a chickpea couscous salad. Nothing fancy but better than the falafels from a box and veggie dogs we had last night . Now I can spend the afternoon lazing on the couch holding my babes.

Crockpot Minestroni Soup (again ) and Bread. I'm sick of it but my DS 1 loves it and given that it's a crockpot recipe it's an easy dinner.

nightwe hadcreale black eyed peas from fat freevegan. tonight curly kale & mash baked in the oven. the girls laid a few eggs so we'll havean omlet to go with that

so psyched i found this thread!

last night was spaghetti squash aglio e olio w/ sauteed greens and tempeh. tonight its a new casserole: layers of sweet potato, brown rice, black beans, and spinach with coconut milk, lime, and cilantro. i'm excited.

Ummmm...yum on the casserole . If it turns out do you think you could post the recipe. I love coconut milk.

We're doing some kind of fettucine bake and some raw veggies with a white bean dip.

I'm on the hunt for casserole recipes too!

Tonight is chickpea quinoa casserole with a balasamic maple glaze. Serving it with green beans.

The pot pie I made last night was awesome! There are no leftovers.

Tonite I am making sweet and sour tofu using this recipe. I have been craving sweet and sour.

last night we had mujadara, roasted (frozen) asparagus, and cabbage-apple salad with raspberry dressing.

two nights ago was seitan hot wings, mashed potatoes, and the same salad.

tonight wren and i were at a friends' and we four girls ordered thai.

i wasn't super into the frozen asparagus i must say. looking for ways to use it that won't make it get so mushy.

Tonight will just be pasta w/trader joe's meatballs. DD's 1st b-day party is tomorrow so we will be busy baking a cake and making food for tomorrow.

it turned out really well and my dd LOVED it, especially the beans.

here's the recipe:

2 cans of coconut milk
fresh cilantro, chopped
lime juice & zest, to taste
2 sweet potatoes, sliced very thin
spinach (baby or bunch, chopped)
2 cans black beans, rinsed
2 cups brown rice
corn meal
thyme

Cook the rice ahead of time, and leave it perhaps even a little undercooked. In a bowl mix the coconut milk, cilantro, lime juice, and a little lime zest. Coat the bottom of a casserole dish with some of the coconut milk mixture. Then a layer of sweet potato, then rice, then beans, then spinach, then more sweet potato, then another layer of coconut milk, rice, beans, spinach, potato, milk, rice, beans, spinach, milk. Cover the top with corn meal and thyme (fresh or dried), cover and bake in oven at 400' for about 35-40 min. Uncover and cook for another 5-10 minutes.

We put salt and pepper on at the table b/c I wanted the baby to have it without, but it will need some at some point. And you may find that you need more or less of the ingredients depending on the size of your pan.

I know this is the January thread but thought I'd post this here and complete this request. Sorry, it took so long but have had a houseful of sickies for the past week. The fettucine bake was not that great but I'll post the recipe anyways. Too much cheese and not enough veggies and the kids didn't like it. It can definitely be tweaked though. We're lacto-ovo so there is cheese and eggs.

Fettucine Bake

3-1/2 cups tomato sauce
500g dry fettucine noodles
4oz mozzarella cheese, grated
4oz swiss cheese, grated
1/2 cup Parmesan cheese
2 eggs, beaten
1-1/2 cups ricotta cheese
pinch nutmeg
salt and pepper

Cook pasta and set aside. Mix the mozz, swiss and parmesan cheese together and divide into two portions. Mix together the eggs, ricotta, nutmeg, salt and pepper.

In large bowl, combine the tomato sauce, noodles and one portion of cheese, Put half of this mixture into a 13x9 dish. Spoon ricotta mixture over noodles. Top with remaining mixture and sprinkle with second portion of cheese. Make at 350F for 30 minutes.
