We're trying Sweet and Sour Tempeh from The Vegan Table. Hope it's something Little Miss will eat!

I roasted some tomatoes in the oven for 3 hrs along w some garlic cloves and EVO. Think I roasted them too long so I added them to some sauce. Had it over whole wheat pasta and fresh basil. Served it w a big green salad and homemade dressing.

This morning we had banana walnut waffles from veganomicon with a handful of choc. chips thrown in. Best waffles I've ever had! Never would have known they're vegan.

Tonight will be a throw together night. Asparagus and ?? Pasta probably. Veggies and hummus.

Chickpea Cutlets, Roasted Brussel Sprouts and sortofish punk rock gravy. I didn't have enough chickpeas to do the cutlets and the gravy so I used great northerns in the gravy instead. it came out really creamy and yummy.

Vegan meatloaf, mashed potatoes, steamed carrots and a green salad.

Tried another meatloaf from the magical loaf studio. This time using pinto beans. Can't wait to try it.

All of these meals sound so yummy!

Tonight it was Black Bean Soup from La Dolce Vegan with cornbread. Very simple soup, extra yummy topped with diced avocados!

tonight was leftovers night so we had something of a smorgasboard (sp?):

i had chickpea cutlets and a red cabbage-apple-walnut salad
my husband had dal, rice, roti and some mashed potatoes and parsnips
toddler requested homemade baked beans and orzo (!), and then polished off her dad's mashed potatoes and parsnips. lol!

Sweet and sour tempeh over brown rice. I burned the rice not once but twice! Here's hoping the third time is a charm so we can finally eat!

Tonight I made my own Baba Ghanouj, along with baked spiced pita chips, and a mediterranean chickpea salad. It was delish! Never made baba ghanouj before, I was surprised how easy it was.

Tonight we're going with a chickpea loaf, roasted potatoes and green beans.

Last night we had carrot-ginger soup, bread and cheese.

I've been out of this thread for a while (no idea why!). We have so much food in the fridge right now, due to crazy nesting pregnancy instincts!

I think tonight I'll use the leftover cashew cheese sauce (from the Mac & Cheese recipe out of The Vegan Table - it makes a TON!) and make some baked mac and cheese, with some velvety squash with roasted garlic (already made!) and maybe some frozen broccoli (if my grocery delivery EVER gets here!)

I have a ton of beans to use up so I made a whilte bean soup. Sauteed lots of onion, garlic, some carrots, the beans and in the end added some finely sliced collard greens. Served w a drizzle of olive oil and fresh baked bread.

We're doing Black Bean Burgers from Fat Free Vegan. Maybe some home fries and a spinach salad. Trying to keep it easy as I have to head to the gym tonight!
