I received an email from mothering mag with this recipe in it http://www.mothering.com/recipes/better-butter-biscuits

I made the biscuits, but after tasting them and discussing it in N&GE,

it seems like there may have been a typo in the amount of baking soda. I 'think' it might need to read 3 teaspoons, not 3 Tablespoons. Is there a way to alert the editors?

I don't think so...

Southern baking powder biscuits do have more baking powder. That is baking powder, not baking soda.

Is it possible you are over mixing?

This recipe from Alton Brown (who is Southern so I figure he knows ) also contains a lot of baking powder.

Well, the reason I thought it was too much baking powder was because the I could taste it in the biscuits. I just linked to that thread tbecause several people thought it sounded like a lot. I haven't actually tried it with less yet, but i will and report back. Thansk

There is an error in the directions however. Directions say:

Sift together the flour, baking soda and salt. Cut in cold butter with pastry blender (or two knives). Add milk all at once. Stir until a soft ball is formed. On a lightly floured surface knead dough for 3 minutes. Roll dough to measure 1/2 inch thickness. Cut circles with a floured glass or biscuit cutter. Put on ungreased baking sheet and bake for 10-12 minutes until lightly golden. Serve hot.
However, there is no baking soda in the recipe. Baking powder is however.

Also, salt is listed twice in the ingredient list.

Okay, the Mothering recipe is definately wrong. Even Alton Brown only uses 4 teaspoons. I think the Mothering recipe should be 3 teaspoons. NOT 3 Tablespoons.

Is there an easy way to suggest to the editors that it might be wrong? I was relaly bummed, my kdis complained of the bp taset - it was very strong (crumbly -ness aside).

Re-make it with teaspoons and not tablespoons. See if that works.

Oh bother.

Obviously I was sleep deprived and read the AB recipe wrong. I can't help with the experiment, I just got home from out of town and have no milk.

It's not you, it's the recipe. It's all screwed up. I have looked at it several times and keep seeing things wrong with it. I think it's one of those mind puzzles. You know, the pictures you keep looking at find weird things in it.
