How to make almond milk more um.... palatable?

I have been making my own almond milk in an effort to eat less processed food. (I used to eat plain unsweetened soy milk.) And it's...ok. I mean, it has a weird taste to it. How is it supposed to taste? I just soaked almonds and then blended them with a few cups of (fresh) water and then strained that.

So do you guys add anything to it? Or should I just keep drinking it and I'll get used to it?

You might try removing the skins before you blend the almonds. They pop right off after the almonds have been soaked.

Also, try adding just a touch of honey when you blend. Sometimes the smallest bit of sweetness helps with the flavor.

Perhaps you could just not drink it?

We stopped drinking cow's milk in favour of rice milk and then switched to almond milk a few years ago. I never got used to the flavor. We use it on cereal and it's manageable then. Otherwise, we just don't drink "milk". Is there a particular nutrient or nutrients that you feel are missing from your diet that you're trying to get with almond milk? You could always just eat some raw almonds and drink water--it's essentially the same, nutrition-wise.

I have used it for cooking, or in green smoothies, but never drink it plain. Just like I don't love almond butter plain... have you tried adding a dash of pure really vanilla extract?

And try it in a green smoothie! Yum.

I kind of look at the whole "milk" products as a waste of money and shelf space in the pantry. I mean, if you like it in a drink, coffee say like me, or out of the glass then it's great. but for a smoothie or something all it is is something pureed with water and sweetner and vanilla. When I do non milk smoothies I just use water, and vanilla and some nut butter which is the whole nut and cheaper.

If you don't like it I just wouldn't use it. If you're doing it for smoothies try coconut milk, now THAT is good!

I just need something to drink with my cereal. I don't drink 'milk's otherwise. But I am a cereal addict!

that being the case I'd add a date or some vanilla as suggested. Coconut milk also does really well over cereal I've heard.

I agree that replacement milks are a waste for the most part, but I do use them in baking. For me though it's coconut all the way. In smoothies and the like I just add nut butter to the blender and voila! Instant creamy goodness.

Mmmm..coconut milk for baking? I've never tried it. We've been using the almond milk for the kids' cereal and for baking thus far. I don't think there is a shelf-stable coconut milk available for sale in Canada though. Does anyone know of a brand?

I toast the almonds before soaking. It's makes a big difference. Plus, I add a little vanilla.

I make it in the vitamix and I put in the scraping of 1/4 of a vanilla bean or a bit of vanilla extract (homemade). I also add a pinch of raw sugar, about a teaspoon for 20 or so ounces. I bet honey would be good too. I also strain it really well since I don't care for any texture to it.

I too have been converted by mdc to the wonderful wonders of coconut milk!!! It beats any other "milk" hands down taste and health wise.
