looking for egg ideas

We eat about 3 dozen eggs a week, which is good, but I am interested in incorporating a little more happy eggs into our lives while I try to figure out how to financially incorporate happy meat into our lives.

I am looking for some main meal ideas and also some snack ideas.

We already do fried eggs on rice.
Scrambled eggs with onions or plain
spanish tortilla (like a frittata) (youngest won't eat)
quiche (youngest won't eat)
fried rice with egg (both kids won't eat it)
fried egg sandwiches sound nice but we are gluten free so that is extra work for me.

any ideas?

I use raw yolk in our smoothies
hard boiled eggs
eggs for breakfast
custard

We have 12 chickens and were getting about 8 eggs/day before it got cold. We do eggs in smoothies, hard boiled eggs, and eggs for breakfast as well. In addition, last month we made a ton of egg nog from this recipe. Yummy! We also make this spinach pie (more like a spinach quiche, really), which my 2yo loves. The other thing I made is deviled eggs which DS likes more than "plain" hard-boiled eggs.

I'll be subbing as we're getting 18 more chicks this spring and I definitely need more ideas for what to do with the eggs once they start laying again.

Make your own mayo w/ eggs and make egg salad, eat w/ lettuce wraps. And deviled eggs! (You could always use the deviled egg filling as veggie dip--I think it would be divine!)

Make eggnog.

Omelet Muffins

Along the lines of the custard idea, make ice cream w/ eggs in it for smooth/creaminess.

Start cooking w/ coconut flour--you won't believe the amount of eggs in those recipes! High fiber, low carb, gluten free, and full of protein (from those happy eggs!) There is a coconut flour thread right now w/ lots of great ideas...

Oh good idea. We eat several egg based meals each week and I'd love to expand my recipe list.

I don't know if this has a name or not. It's just something I've made for a long time.

I fry some shredded hash brown potatoes, usually in olive oil, sometimes with diced onions. When they are mostly golden I pour a scrambled egg mixture (usually 2-4 eggs depending on amount of potatoes) with either water or milk in a small amount with some salt and pepper to taste. I let it cook so that the eggs are set and mostly dry on top and flip it once. Then I serve it with salsa poured over the top.

A variation that I just came up with in a desperate "I don't want to go to the store" moment was to add leftover boiled spinach to the egg mixture and cook the same. I also used pasta sauce that time cuz I was out of salsa and I actually thought it was a good variation. And my toddler ate the spinach that she wouldn't touch the night before.

We love deviled eggs, and I like to make quiches and frittatas with chicken sausage, cheese, spinach, etc. It's a good way to get veggies in too.

I also love scrambled eggs with chunks of cream cheese cooked with them.

I love adding raw eggs to very hot soups. Whipping it first makes it kind of like egg drop soup. Not whipping it can make the egg more solid.

I still have to have my asian noodle fix, every once in a while, so I either drop in a whipped egg into the water as I'm cooking the noodles or I quick scramble an egg and add it to the noodles once they are drained.

Oh, and blueridgewoman, we LOVE adding cream cheese to scrambled eggs, too. YUM!!!
