Apricot Preserves - Help me use this

I took an inventory of my standing pantry and found some apricot preserves that have been hanging around for a while now, time to use it up.

Eating it on toast or as a PB & J sandwich apparently isn't going to happen.....

What else can I do with it?

Any ideas or recipes?

I've used it as a glaze for pork or chicken.

I mix it with mustard and water for a pan sauce after cooking pork chops/pork medallions.

You could make breakfast flans as in this recipe and use the preserves instead of the maple syrup (its real tasty).

You could probably use it in muffins too.

Oh I am jealous - I love apricots and the season passed me by last year before I could make any jam.

They are delicious on top of steel cut oats with cream and chopped nuts.

Apricot jam, teriyaki, ginger, and garlic make a great marinade and glaze for chicken or pork on the grill. I've also slow-cooked chicken with this and topped with a pineapple ring.

Sounds good, I'm thinking, crockpot chicken somehow. I do have some pineapple chuncks found in pantry too, no real plan for them, but bought them as they were 20 cents a can after coupon and sale.

Think I might try the other jar with some oatmeal, that sounds good too.
(I found two jars in pantry)

My MIL makes a coffeecake called Peach Flip that she actually uses apricot preserves for. I've been putting peach-apricot preserves on my popovers every morning. Yum!!

Mmm, love apricot preserves. Frankly I'd eat it on toast or just with a spoon. But I'm sure it would be tasty spread on top of a brie/camembert and baked in the oven for about 10 min (we make this often when we have guests, serve with crackers and sliced apples if you happen to have some).

Or how about one of the brioche recipes from Artisan Bread in 5 min? Here's the actual dough recipe. And a couple of things to do with it: blueberry lemon curd ring and strawberry danish (both of which I think you could substitute your preserves instead of their fruit filling.

I have a recipe where you get pork chops, spread apricot preserves on one side and then sprinkle breadcrumbs over it, then a little salt and pepper. Then you bake them in the oven at 425 for 15 minutes. Super easy!

I've always bought apricot preserves to use as fillings in hamentashen (jam-filled cookies that are traditional for the Jewish holiday of Purim.) I'm sure they'd make a tasty filling in any kind of cookie or cake that calls for a filling.

Not a health food dish, but it's incredible and everyone always raves about it when I make it for people.

Apricot Chicken

1 c. apricot preserves
1 c. french dressing
1 pkg. onion soup mix

Mix together and pour over chicken breasts. Bake for 40 minutes at 350. Serve over rice.
