Some kind of sauce for pasta with coconut milk

So I'm grain free, DH prefers potatoes, and I give the kids a side of pasta with their dinner often because it just makes them eat so many more veggies and i'm fine with it...anyways!

I have a couple cans of coconut milk and i'm not really in the mood for expirimenting. They love alfredo type pasta, and cheesy sauce though not your typical mac n cheese thing, they like saucier and only fine cheese (little food snobs they are i'm so proud ). Garlicky/oniony is fine, but they do not have the palate for curries. Usually I make one sauce, then pour it over potatoes for DH and pasta or rice for the kids, and veggies for me

How about peanut sauce? PB, coconut milk, garlic, onions, chili, lime, etc.

I make coconut alfredo all the time.

I simmer the coconut milk with a quartered onion, a bunch of garlic cloves sliced in half, a bay leaf and some pepper corns. Once it's simmered for 20 to 30 min I strain it, add some garlic powder, salt, pepper, parmesan, and 3 or 4 tbsp of cream cheese. If I'm really getting fancy I add some gruyere. Mmmmmmmmmmmmmmmmmmmmmmm...

Ooooh that sounds good!! I never thought to make a sort of reduction then strain it. I have some homemade mascarpone cheese, too. I'll bet that would be good over a big pile of veggies

YUM!!! Homemade mascarpone cheese! OMG!

I have a recipe for mascarpone peas that is out of this world!

Do share! I could seriously just dump a pound of peas and a spoon of mascarpone with a little salt/pepper and die a happy individual

I use coconut milk to cut the spice in my curry sauce.

I make bechamel with coconut milk but mine is due to allergies so I don't get homemade mascarpone...omg
