What else can I serve to make chicken soup a more substantial meal? I'll make some noodles that can be added (some of the family is GF) and have some bread...anything else? I don't have salad stuff. My Dad will want "more." Thanks!

We had soup for dinner. I had turkey broth, mini turkey meatballs. There was broccoli and peas cooked to go in it (kept separate because DS can't have peas and DD2 can't have broccoli). And there were 2 kinds of noodles to go into it (wheat for DD1 and DH) and rice noodles for me, DS, and DD2.
On the side, I served pineapple chunks tossed with raw coconut and coconut milk (modified "ambrosia"). It was enough for all of us.

Make the soup itself more substantial. You can add a great variety of vegetables. You can add starch other than noodles, such as potatoes (and those can be pureed to make it more creamy and give a more creamy and substantial mouth feel when you eat it without adding fat). We like to serve tea sandwiches with our soup... small, two- or three-bite sandwiches that can also be dunked into the broth. You can make a really great variety with GF bread and they can be really filling. Also cornbread goes with most soups. How about hummus and crudités? You could make chicken meatballs (ground chicken, veggies, spices, an egg, and a GF grain for binder) and if you pan fry them on the side, people can add as many as they want to their soup. Sky's the limit. Hope some of these suggestions help.

I use the chicken soup recipe found here...

And add in extra chicken or veggies, or both, if needed, and sub in rice noodles for the regular wheat-based ones. Add in some idlis (naturally GF), and it should be pretty filling.
I make idlis like this, which isn't completely traditional, but I had the equipment.
