quinoa recipes?

Does anyone have a link to a good site or have any good quinoa recipes they can share? I just started using it more and love it! my kids like it too tonight we are having quinoa stuffed peppers and im interested in finding more uses for this stuff. I've seen it can be used for breakfast even!

MMMMM. Breakfast quinoa rocks!

Cook it in orange juice and add a drizzle of honey and toasted pecans.

Use it in soups. Use it in a grain salad. Use it in those peppers 'cause that is soooo yummy!

I like to top it with chunks of roasted squash (acorn or butternut), nuts, and blue cheese crumbles.

I love making cold quinoa dishes. My favorite is quinoa with chopped cucumbers, halved grape tomatoes, feta cheese, mint, fresh lemon juice, and a little olive oil. I make a big batch at the beginning of the week and eat for lunch all week.

Cold barley salads are also delicious. My favorite is barley with fresh raw corn, scallions, diced red bell pepper, white balsamic vinegar and a little olive oil.

2/3 of my immediate family are celiacs, so we have quinoa a lot.

Most often, I make a basic pilaf by cooking onions and garlic, and maybe mushrooms or celery or whatever is on hand in a little butter and olive oil. Then I toss in the rinsed quinoa and toast it a bit. I add water and chicken stock, usually about 50/50 and simmer until its fluffy.

I find that just plain simmered quinoa is a little bland, but with butter, or cooked in stock, or some other salty thing, really makes it very delicious. When we were trying to get my daughter to gain more weight, we added diced bacon. MMM Quinoa is one of here favorite foods, and mine, too. It cooks faster than brown rice, and can be done easily in a rice cooker, if you have one.

I just made this for the first time and everyone loved it.





Quinoa Pudding
• 3/4 cup uncooked Quinoa
• 1 1/2 cup water
• 2 cups nonfat milk, divided
• 1/3 cup sugar
• 1 egg
• 1/2 cup milk
• 2 t vanilla
• 2 T unsalted butter
Bring the Quinoa and water to a boil, cover and reduce heat, cook for 25 minutes or until Quinoa is soft and fluffy.
Stir 1 1/2 cup milk and sugar into the Quinoa and cook until thick and creamy, about 20 minutes.
In a separate bowl mix 1/2 cup of the milk and egg. Stir into Quinoa mixture for two more minutes. Finally stir in the butter and vanilla. Enjoy!

I made this the other night. I used red quinoa but it would work fine w/regular.

1/2 onion, sliced thinly into strips
1/2 C grape tomatoes sliced in half
2/3 C frozen edamame

I cooked 1 cup of quinoa in boiling water for 15 min, adding the edamame w/5 min to go. Drain.

While the quinoa was cooking:
1. Saute onion in olive oil until lightly brown. Add salt to taste.
2. Add the tomatoes when onion is almost done to warm them.
3. Add onion/tomato mix to quinoa.

I mixed olive oil and balsamic vinegar (red wine vinegar would've worked well too), then added to the quinoa dish. I served it warm.

Anyone use quinoa raw and sprouted? I havent but wondering how it would be.

Quinoa in place of sushi rice. Quinoa w/ eggs and sausage for breakfast. Quinoa with veggies and shrimp instead of shrimp fried rice.

Tonight we had chicken quinoa soup, instead of noodles. Worked well!

I like to cook it in coconut milk with a teaspoon of green curry.

Subbing for all of the new ideas. Lately, we've been adding quinoa to soups. My favorite combined quinoa with roasted red peppers.

I made some great quinoa today by soaking it for 30 min, sauteing some minced onions and carrots, adding the drained quinoa and toasting til the water evaporated, then steaming with some salt until cooked.

Do you get the mag? Great recipe in there using quinoa. I plan to make this w/e.

I'll have to come back with my all-time-fav quinoa recipe later. It's got cashews, peas, fresh carrot juice and cilantro to name a few of the ingredients. Absolutely amazing meal!

I sprouted quinoa for 2 days and made some sprouted nut milk to go with it and top it with maple syrup and berries. I will let you know how it goes (mainly if the 2 yr old will eat it).

Here it is!!! I need to make this again very soon!!

Curried Quinoa with Peas and Cashews (serves 4)
From Vegetarian Cooking for Everyone Deborah Madison

2 TBSP canola oil or butter
1 onion, ÂĽ finely diced, Âľ coarsely chopped
1 c quinoa
2 tsp curry powder
Salt and freshly milled pepper
2 zucchini, diced into small pieces
1 c carrot juice
1 c peas
ÂĽ c thinly sliced scallions, including a little of the green
½ c cashews, roasted and coarsely chopped
2 TBSP chopped cilantro
Sour cream (optional)

Heat ½ the oil in a large soup pot, add the finely diced onion, and cook over medium heat for about 3 minutes. Stir in the quinoa, ½ tsp curry powder and ¼ tsp salt and cook for 2 minute. Add 2 cups boiling water then lower the heat. Cover and cook for 15 minutes.

Meanwhile, heat the remaining TBSP oil in 10-inch skillet. Add the chopped onion, zucchini, and remaining 1 ½ tsp curry powder. Cook, stirring frequently, over medium heat for 5 minutes. Add 1/3 c water, the carrot juice, and ½ tsp salt. Cover and simmer for 5 minutes, then add the peas and scallions and cook for a few minutes more. Stir the vegetables and cashews into the quinoa. Taste for salt and season with pepper. Serve in soup plates, garnished with cilantro and a dollop of sour cream.
