I mix some quinoa in with my oatmeal, when I eat oatmeal for breakfast. I find that oatmeal does not tide me over for very long by itself; the quinoa adds protein and helps the oatmeal be more filling!

I just add it to the hot water a little while before the oatmeal (not the quick oats kind). It needs a bit more cooking than the oatmeal does to reach the same consistency.

I've only ever made one quinoa recipe, but it's yummy!

Quinoa Blueberry Muffins

2 c flour
Âľ c dark brown sugar
1½ t baking powder
1 t salt
½ c dried blueberries
2 c cooked quinoa
ÂĽ c vegetable oil
Âľ c milk
1 egg
1 t vanilla
  1. Whisk together dry ingredients, salt, blueberries, and quinoa.
  2. In a separate bowl, beat together remaining ingredients.
  3. Stir milk mixture into flour mixture, blending until just combined.
  4. Pour batter into 12 greased muffin cups.
  5. Bake 25-30 minutes at 350°F.

notjustmamie, do you think that would work with fresh/frozen blueberries? I would love to try that, but never have dried blueberries, as they are just so darned expensive.

we officially love quinoa, I made a great casserole last night and it was requested again tonight! here's what I did:

sauté 1 chopped onion in a couple Tbsp oil, add carrots if you have them, then add 2 cups (rinsed) quinoa and 1 cup lentils plus 6 cups beef or chicken broth. and whatever spices fit your fancy (I used a thyme/sage/rosemary mix). when you cook down the liquid sufficiently you can eat it like that, but better is to dump it in a casseole dish with tomatoes (and/or mushrooms, broccoli, cauliflower,whatever veggie you have), add some grated cheese and leftover cooked meat (I used up some Christmas ham), top with cheese and bake until dinnertime (30-45min) to get everything toasty. YUM!!!

Haven't been checking on my posts in a while--sorry! If you haven't already gone ahead and tried it, I'm sure it would work fine with either fresh or frozen berries. You may want to start with only about half the milk and see how thick your batter is and whether you'll need it all.
