Are there any biscuit recipes out there that are semi healthy? All the ones I can find seem to use tons of shortening or butter. And can I replace part of the white flour with wheat in most recipes?

I often replace the all-purpose flour with whole wheat, but I find that it makes a drier biscuit.

I use a buttermilk biscuit recipe, which I figure is a little better than a traditional butter and cream recipe. It still uses a lot of butter though, so I don't think it's what you are looking for, sorry. I'll be interested if someone posts something truly healthy.

You could use palm shortening which isn't loaded down in trans fats and low fat milk?

I reduce the amount of whole wheat pastry flour when I sub it for regular flour by a couple tsp a cup.

If what you're truly after is low fat and "healthy" by that definition, then you're kind of stuck with yeast rolls.
