Nut-free granola bars?

Does anyone have a recipe for granola bars that does not include nuts? Dh is allergic to all nuts, and we all love granola bars. I end up buying the only packaged brand I've found that doesn't include the things he's allergic to, but I'd much rather make my own.

He is also allergic to coconut and wheat germ and cinnamon - all frequently found in granola bars.

is he allergic to seeds? I love pumpkin seeds, my DD cannot have most nuts either.

You could make the lara bar type wtih dried fruits and seeds instead of nuts.

They are these fruit bars you can buy. Instead of granola like oats, etc it's just dates as a base, with some dried fruit and nuts.

If you have a food processor you can make them easily. I don't really measure I should next time I make them.....just put dates, any dried fruit you like and seeds like pumpkin in the food processor and turn it on. You want to stop before it looks like "butter"

I like to use dates, dried cranberies, pumpkin seeds, flax seeds and coconut oil. Also just dates, seeds and cocoa powder is SO good.

I posted on the TF forum about how I cook down dates and fruit to make sweetner and you could use that if you watn a more traditional granola bar with oats. I would just use the date/fruit puree with oats and seeds and slow bake them.

He can't eat uncooked dates, but if I cook them I think he can.

I don't know howh often/well you bake and I don't have exact recipes but here's a basic of what I do: Chop dates, pour little boiling water over and cover to soften about 15 mintues. Then PUree in a blender wtih a whole apple or pear ( I have a vitamix and it gets SUPER smooth, but if you let it go in a regular blender for a couple minutes it will be smooth). Then reduce in a small pot until very thick. I use this as the sweetner/glue in granola or any type bar.

My dh is also allergic to most nuts, so I always substitute seeds like: pine nuts (pricey, but not nuts), pumpkin seeds (pepitas), sunflower seeds and sesame seeds.

This works in all kinds of baked goods, as well as salads, etc.

Try this out.. Its called pengcast.. Here instead of nuts oats and dry friuts are used

1Tbsp butter
1-1/4 cups rolled oats
1-1/4 cups chopped toasted walnuts
**substitute a mixture of oats, cereal, and dried fruit, like chopped dates or raisins or even mini chocolate chips, whatever you like
1/2 cup oat bran
1-1/2 cups unsweetened CRISP brown rice cereal
1 cup chopped dried cranberries (note: I never bother to chop these--too lazy!)
3 Tbsp finely chopped crystallized ginger
1 cup brown rice syrup
1/4 cup sugar
1 tsp vanilla extract
1/2 tsp fine sea salt

Grease an 8X8 or 9X9 baking pan with the butter. Mix oats, whatever you've subbed for the walnuts, cereal, cranberries and chopped ginger together in a big bowl. In a saucepan, add the rice syrup, sugar, vanilla, and salt. Bring to a boil over medium heat, stirring constantly. When it thickens slightly (about 5 min.), remove from heat and pour over oat mixture. Stir until the syrup mixture is mixed throughout the cereal mixture. Spread into your baking pan (use your hands--they will get sticky!). Cool. Cut into whatever size is appropriate for you.

Edit: Make sure that you sub both oats AND cereal (and whatever other stuff) for the walnuts, because too many oats will probably cause this to become to heavy textured. Also, you could probably drizzle the tops with icing, which might appeal to your child.

I just made this recipe. We substituted grapeseed oil for the olive oil it called for, used a mixture of agave and molasses for the sweetner, added a little cinnamon to the sugar mixture before adding the oats, and added chocolate chips before baking. Obviously, you'd only add whatever additions are healthy for your own family. We only baked for 20 minutes so they'd come out chewier.

They came out a little more crumbly than the kids wanted, so we plan to use more oil, and possibly add an egg, to the next batch.
